Cranberry Orange Salad

Shrimp Cakes with Asparagus and Chive Vinaigrette

FOR VINAIGRETTE:Whisk olive oil, chives, lemon juice and shallots in bowl to blend
- VINAIGRETTE
- 1 cup olive oil
- 2/3 cup chopped fresh chives or green onions
- 1/4 cup fresh lemon juice
- 3 tablespoons finely chopped shallots
- SHRIMP CAKES
- 36 asparagus spears, trimmed to 6-inch lengths
- 4 tablespoons(1/2 stick)unsalted butter
- 2/3 cup plus 3 tablespoons chopped shallots
- 1 1/2 pounds uncooked medium shrimp, peeled, deveined,finely chopped
- 1/2 pound sea scallops,finely chopped
- 1 1/2 cups fresh white breadcrumbs
- 1 cup diced red bell pepper
- 2 large eggs,beaten to blend
- 1/4 cup chopped fresh chives or green onions
Pancetta Stuffed Mushrooms

Preheat oven to 425°. Trim mushroom stems by cutting off the very end and discarding
- 1 1/2 pounds favorite mushrooms - approximately 1 1/2 inches wide
- 3 -3 tablespoons unsalted butter, more for casserole dish
- 1/2 -1/2 cup pancetta, finely diced
- 2 -2 medium shallots, finely diced
- 2 -2 tablespoons fresh sage, chopped
- 1 -1 pinch red chile flakes
- -salt and pepper to taste
- 2/3 -2/3 cup seasoned bread crumbs
- 1/2 -1/2 cup fresh grated asiago or parmesan cheese, more for garnish
- 3 -3 tablespoons olive oil for drizzling
Apple Rum Cake

Cream together shortening and sugar
- 1/4 c. shortening
- 1 c. sugar
- 1 egg
- 1/4 t. salt
- 1 t. cinnamon
- 1 t. nutmeg
- 1 t. baking soda
- 1 c. flour
- 2 T. hot water
- 1 t. vanilla
- 1/2 c. chopped nuts
- 2-1/2 c. pared, cubed apples
- 1/2 c. butter
- 3/4 c. brown sugar
- 1/4 c. cream
- 1/2 t. rum-flavored extract or 1-2 T. rum
Chocolate Pie

Combine flour, sugar, salt and cocoa in pan
- 5 Tablespoon flour
- 1 cup sugar
- dash of salt
- 2 Tablespoon (heaping) cocoa
- 2 eggs
- 2 cups milk
- 1 teaspoon vanilla
- 1 Tablespoon butter
Peach-Apple Pie

Heat oven to 425 degrees. Mix sugar, flour and cinnamon in large bowl
- 1 c. sugar
- 1/4 c. all-purpose flour
- 1/4 t. cinnamon
- 3 medium peaches, sliced (2 cups)
- 2 medium green cooking apples, peeled and thinly sliced (2 cups) (sometimes I microwave the slices for 30 seconds)
- 1/4 c. sliced almonds
- 1 T. butter or margarine
Sausage-Cheese Bake

Place sausage and onion in a 9-inch pie pan
- 1/2 lb. link sausages, diced
- 1/3 cup chopped onion
- 2 eggs
- 1 cup pancake mix
- 1 cup milk
- 3/4 teaspoon dried basil
- 3/4 cup shredded cheddar cheese
7-Up Sloppy Joes

Melt butter and saute onions
- 1 T. butter
- 1/3 c. chopped onion
- 1 lb. ground beef
- 1 t. salt
- 1/8 t. pepper
- 2 T. flour
- 1 (7-oz.) bottle 7-Up
- 3/4 c. catsup
- 1 t. mustard
- 2 t. Worcestershire sauce
Creamy Rigatoni with Chicken and Mushrooms

Heat oil. Saute mushrooms, onion and garlic until lightly browned
- 2 T. EVOO
- 8 oz. button mushrooms, sliced
- 8 oz. Shitake mushrooms, sliced
- 1 yellow onion, chopped
- 4 garlice cloves, pressed
- 1 lb. chicken breast, cut into 1-inch pieces
- salt and pepper
- 2 c. chicken broth
- 4 oz. Marsala wine
- 4 oz. white wine
- 2 c. heavy cream
- handful fresh basil leaves, chopped
- 1 lb. Rigatoni pasta, prepared al dente
- Pecorino Romano cheese, freshly grated
- fresh parsley
