Yellow Squash and Carrots

Set a 12-inch saute pan over medium-high heat and, once, hot, add the butter and olive oil
- 2 T. unsalted butter
- 1 T. oilive oil
- 1/2 lb. carrots, diced small
- 1-1/2 lb. large yellow squash, halved lengthwise and then sliced crosswise into 1/4 inch half moons
- 2 T. thinly sliced shallots
- 2 t. kosher salt
- 1/2 t. white pepper
- 1 T. chopped fresh tarragon
Amy's Barbecue Chicken Salad

"This is very similar to a salad at a popular restaurant near my house
- 2 skinless, boneless chicken breast halves
- 1 head red leaf lettuce, rinsed and torn
- 1 head green leaf lettuce, rinsed and torn
- 1 fresh tomato, chopped
- 1 bunch cilantro, chopped
- 1 (15.25 ounce) can whole kernel corn, drained
- 1 (15 ounce) can black beans, drained
- 1 (2.8 ounce) can French fried onions
- 1/2 cup Ranch dressing
- 1/2 cup barbeque sauce
Bundt Coffee Cake

Grease bundt pan thoroughtly
- 3/4 c. sugar
- 2 T. cinnamon
- 1 c. chopped pecans
- 1 box yellow cake mix
- 1 pkg. vanilla instant pudding
- 4 eggs
- 3/4 c. water
- 1 c. sour cream
- 1 t. vanilla
- 1/4 c. oil
Lentil Soup

Coat slow cooker with nonstick cooking spray
- 2 cartons (32 oz each) vegetable broth
- 1 lb dry lentils
- 1-1/2 c. chopped onion
- 1-1/2 c. chopped baby carrots
- 1 c. chopped celery
- 1/4 c. EVOO
- 2 T. minced garlic
- 2 t. Italian seasoning
Muffaletta Olive Salad

1. Drain all ingredients. 2
- 3/4 cup pimento-stuffed olives
- 1/4 cup pitted Kalamata olives
- 1/4 cup giardiniera (Italian pickled vegetables)
- 2 lg. pepperoncini
- 3 - 4 pickled onions
- 2 Tbsp. capers
- 1 md. clove garlic, chopped
- 1 tsp. dried oregano
- A couple of grinds of blackpepper
- 2 tsp. fresh lemon juice
- 2 Tbsp. olive oil
Poppyseed Pound Cake

Preheat to 325 degrees. Cream sugar and margarine together
- 1-1/2 cup sugar
- 1 cup margarine
- 4 eggs, separated
- 8 oz. sour cream
- 1 T. vanilla
- 1/2 jar poppyseeds
- 2 cups flour
- 1 T. baking powder
Frosted Cashew Cookies

Preheat oven to 375 degrees
- 1/2 c. butter
- 1 c. brown sugar
- 1 egg
- 1/2 t. vanilla
- 2 c. sifted flour
- 3/4 t. baking powder
- 3/4 t. baking soda
- 1/4 t. salt
- 1/3 c. sour cream
- 1-3/4 c. salted whole cashew nuts
- 1/2 c. butter
- 1/4 t. vanilla
- 3 T. table cream
- 2 c. sifted confectioners sugar
Strawberry Rhubarb Compote

Stir strawberries, 1/4 cup sugar, and lemon juice in a small nonreactive pan; bring to a simmer over medium heat
- 10 ounces (2 cups) fresh strawberries, rinsed, hulled, and chopped
- 1/4 cup plus 1/3 cup sugar
- 1 tablespoon fresh lemon juice
- 10 ounces trimmed rhubarb, cut into 1/4-inch pieces (about 2 3/4 cups or 2 large stalks)
- 2 tablespoons water
