Pork Chops With Pineapple Salsa

Combine the rice and 1 2/3 cups water in a medium saucepan and bring to a boil
- 1 cup medium- or long-grain white rice
- 1 pineapple, peeled, quartered lengthwise and cored
- 1 tablespoon minced peeled ginger
- 1 tablespoon vegetable oil
- 1 tablespoon soy sauce, plus a splash for the salsa
- 1/2 teaspoon Chinese five-spice powder
- 1 bunch scallions
- 4 bone-in pork sirloin chops (1/2 inch thick; about 1 3/4 pounds)
- Pinch of red pepper flakes
Spinach Balls

Mix all ingredients until well combined
- 2 (10 oz.) packages frozen spinach, thawed & well-drained
- 2 small onions, very finely chopped (I use a food processor)
- 2 1/4 c. stuffing with herbs (I use Pepperidge Farm)
- 6 eggs, beaten
- 1/2 c. melted butter
- 1/2 c. Parmesan cheese
- 2 tsp. garlic salt
- 1 tsp. black pepper

- 1 1/4 pounds minced chicken & add in mushrooms
- 2 tablespoons onion, chopped
- 1/2 cup Parmesan
- 1/2 cup breadcrumbs
- zest of 1/2 lemon
- 1 tablespoon parsley, chopped
- 1 minced clove garlic
- 1 tsp fennel seeds
- 1 egg, whisked
- salt & pepper to taste
- 1 14-oz canned pizza sauce
- 3 tablespoons olive oil
- 4 oz fresh mozzarella
