Crab stuffed mushrooms

Preheat the oven to 375°F (175°C)
- 15 large white mushrooms,
- 1 cup (8oz | 250g) cooked crab or lobster meat
- 1/2 cup Panko breadcrumbs, divided -- OPTIONAL! Leave out for low carb mushrooms
- 1/3 cup freshly grated Parmesan cheese
- 1/3 cup whole egg mayonnaise
- 1/3 cup spreadable cream cheese, softened
- 1/3 cup chopped green onions, (I use 3 stalks -- green and white parts)
- 2 large cloves garlic, minced (or 4 small cloves)
- 1 tablespoon finely chopped fresh parsley
- 1/4 teaspoon dried oregano
- 1/4 teaspoon kosher salt
- 1/8 teaspoon freshly ground black pepper
- 1/2 tablespoon olive oil

Cut 2 sweet onions into small pieces and chop 1 whole garlic into small chunks

1) Toss the cranberries and pecans together
- 4 ounces dried cranberries
- 3 ounces toasted diced pecans
- 16 ounces chopped semisweet or bittersweet chocolate, melted

- DRESSING:
- 1/2 tsp. salt
- dash pepper
- 2 tbsp. sugar
- 2 tbsp. vinegar
- 1/4 cup salad oil
- dash red pepper sauce
- 1 tbsp. parsley,snipped
- NUTS:
- 1/4 cup sliced almonds
- 1 tbsp + 1 tsp. sugar
- SALAD:
- 1/4 head lettuce
