Beef Tagine with Butternut Squash

Take your basic beef stew to the next level by making this simple, fragrant tagine featuring butternut squash
- 2 teaspoons paprika
- 1 teaspoon ground cinnamon
- 3/4 teaspoon salt $
- 1/2 teaspoon ground ginger
- 1/2 teaspoon crushed red pepper
- 1/4 teaspoon freshly ground black pepper
- 1 (1-pound) beef shoulder roast or petite tender roast, trimmed and cut into 1-inch cubes
- 1 tablespoon olive oil
- 4 shallots, quartered
- 4 garlic cloves, chopped
- 1/2 cup fat-free, lower-sodium chicken broth
- 1 (14.5-ounce) can no-salt-added diced tomatoes, undrained
- 3 cups (1-inch) cubed peeled butternut squash (about 1 pound)
- 1/4 cup chopped fresh cilantro
Fettuccine with Pea Sauce, Asparagus & Fava Beans

A creamy pea sauce provides a wonderful contrast to the crunchy young vegetables
- 1 Tbsp olive oil
- 1 garlic clove, crushed
- 6 spring onions, sliced
- 8 oz (2 cups) frozen peas, thawed
- 2 Tbsp chopped fresh sage, plus extra to garnish
- finely grated rind of 2 lemons
- 3/4 pint vegetable stock
- 12 oz fresh young asparagus, trimmed and cut into 2-inch lengths
- 8 oz/2 cups frozen Fava beans, thawed
- 1 lb fresh or dried tagliatelle (fettuccine)
- 4 Tbsp low-fat yogurt, whisked
Pumpkin Pie Smoothie/Shake - Healthy too!

- 1/3 cup pumpkin puree (Libby’s)
- 1/3 cup FF plain Greek yogurt
- 3/4-1 cup vanilla almond milk
- Few shakes of pumpkin spice (Cinnamon, ginger, nutmeg, and allspice)
- Few shakes of cinnamon (optional)
- Pinch of cloves
- 1 tsp vanilla
- 4-5 ice cubes
Quinoa Black Bean Burgers

- 1/4 cup quinoa
- 1/2 cup water
- 1/2 cup bread crumbs

- 1/2 teaspoon salt
