Apple Crisp....Easy!

Place apples in a greased 9" X 9" baking dish
- 4 cups sliced apples
- 1 tsp. ground cinnamon
- 1/4 cup water
- 3/4 cup sifted all-purpose flour
- 1 cup granulated sugar
- 1/2 cup margarine
Maine Crab Cakes

Combine crabmeat, 1/4 cup panko, and next 11 ingredients in a large bowl; mix with hands until fully incorporated
- 1/2 pound lump crabmeat, drained
- 3/4 cup panko (Japanese breadcrumbs), divided
- 2 tablespoons fine, dry breadcrumbs
- 2 tablespoons sliced green onion
- 1 tablespoon finely chopped fresh flat-leaf parsley
- 1 1/2 teaspoons finely chopped fresh tarragon
- 1 1/2 teaspoons finely chopped fresh cilantro
- 1/4 teaspoon smoked paprika
- 1/8 to 1/4 teaspoon ground red pepper
- 1/8 teaspoon kosher salt
- 1 large egg white, lightly beaten
- 3 tablespoons heavy cream
- 2 tablespoons mayonnaise
- 1 tablespoon canola oil
- Lime Aïoli
Hot Artichoke-Spinach Dip

- Kosher salt
- 1 10-ounce bag baby spinach
- 1 cup packed fresh basil
- 3/4 cup canned cannellini beans, drained and rinsed
- 6 ounces Neufchatel cream cheese
- 1 clove garlic, smashed
- 1/2 cup low-sodium chicken broth
- 1 14-ounce can artichoke hearts, drained, squeezed dry and finely chopped
- 1/4 cup grated parmesan cheese
- 3/4 cup shredded low-fat mozzarella cheese
- Pinch of cayenne pepper
- 2 or 3 dashes Worcestershire sauce
- Freshly ground black pepper
- Cooking spray
- Baked chips, for serving
Warm Chocolate Cakes

Butter and lightly flour 6 (6-ounce) ramekins
- 1 cup (2 sticks) unsalted softened butter, plus extra for buttering molds
- 8 ounces bittersweet chocolate, chopped
- 1/2 teaspoon instant espresso powder
- 4 large eggs
- 4 large egg yolks
- 2/3 cup granulated sugar
- 4 teaspoons all-purpose flour, plus more for dusting molds
- 3 tablespoons Frangelico or hazelnut liqueur
- 1 cup fresh raspberries
- 1 cup fresh strawberries
- Fresh mint, for garnish
Marinara Sauce

This is exactly how I have been making sauce for years!
- 1 tablespoon good olive oil
- 1 cup chopped yellow onion (1 onion)
- 1 1/2 teaspoons minced garlic
- 1/2 cup good red wine, such as Chianti
- 1 (28-ounce) can crushed tomatoes, or plum tomatoes in puree, chopped
- 1 tablespoon chopped fresh flat-leaf parsley
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon freshly ground black pepper
Baked Brie en Croute w/ Apple Compote

This appetizer can be made up to 2 weeks in advance
- 1 Tbs. unsalted butter
- 2 Golden Delicious apples, peeled, cored and
- cut into 1/2-inch dice
- 1/4 cup sugar
- 1/8 tsp. ground cardamom
- 1 round Brie cheese, 6 to 8 oz. and about 4 1/2
- inches wide, slightly chilled
- 10 -inch round of puff pastry dough, rolled out to
- 1/4 -inch thickness
- 1 egg, beaten with 1 Tbs. water
- Plain water crackers for serving
Baked Jerk Chicken

Combine all ingredients except the chicken and lime juice in a food processor and puree until pretty smooth
- 2 teaspoon ground allspice
- 1/2 teaspoon ground nutmeg
- 1 teaspoon salt
- 2 teaspoon dried thyme
- 1 teaspoon ground ginger
- 1 tablespoon brown sugar
- 1 1/2 teaspoon ground black pepper
- 2 tablespoon vegetable oil
- 2 cup chopped onions
- 5 cloves garlic
- 2 habanero peppers
- 1 (5-pound) chicken, skin on, cut into 10 pieces
- 1 cup lime juice
Lemon Basil Chicken

To prepare chicken, combine first 6 ingredients in a large bowl

- 2 tablespoons fresh lemon juice
- 2 tablespoons white wine vinegar
- 1/2 teaspoon lemon pepper
- 1/4 teaspoon freshly ground black pepper
- 4 (6-ounce) skinless, boneless chicken breast halves
- Cooking spray
- Basil Aioli:
- 1/4 cup finely chopped fresh basil
- 2 tablespoons low-fat mayonnaise
- 1 tablespoon fresh lemon juice
- 1 1/2 teaspoons Dijon mustard
- 3/4 teaspoon bottled minced garlic
- 1/2 teaspoon olive oil
Liver Pate

- 1 lb. chicken livers
- 4 tea. flour
- 2 Tlbs. butter
- 1/4 c. finely chopped onion
- 1/2 heavy cream
- 1/2 c. butter, softened
- 1 teas.salt or to taste
- dash of white pepper
- 1/4 teas. mace
- 1/3 c. cognac
Linda's Wonderful Salad

Combine all ingredients for dressing, mix well and set aside
- Salad Dressing:
- 1 head Romaine lettuce
- 1 head Red leaf lettuce
- 1 pt. strawberries sliced
- 2 c. grapes, halved
- 1/2 pineapple sliced and cut in pieces
- small thinly sliced sweet onion
- 1 pkg. dried cherries
- 1/4 c. candied pecans
- 1/2 pkg. soft cheese, such as Harvariti or Butter Kase. cut in small pieces
- 2 c. Mayo
- 2/3 c. sugar
- 1/3 c. cream
- 1/3 c. Ras Vinegar
- 1-2 T. Poppy Seeds , to taste
- 2-3 T Rasberry Jam
