Neeley's Jerk Chicken

- 1 bunch scallions, chopped
- 3 large garlic cloves, chopped
- 1/2 habanero chile, chopped
- 1 lime, juiced
- 3 tablespoons olive oil, plus more for greasing grill grates
- 2 tablespoons soy sauce
- 2 tablespoon packed brown sugar
- 2 teaspoons ground allspice
- 1 teaspoon chopped fresh thyme leaves
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 4 boneless and skinless chicken breasts
- Kosher salt and freshly ground black pepper
Tropical Carrot Cake

- Cake
- 2 1/3 cups sifted all purpose flour (sifted, then measured)
- 1 cup sweetened flaked coconut
- 1 cup dry-roasted macadamia nuts
- 3/4 cup chopped crystallized ginger
- 3 1/2 teaspoons ground cinnamon
- 2 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 2 cups sugar
- 1 cup vegetable oil
- 4 large eggs
- 2 teaspoons vanilla extract
- 2 cups finely grated peeled carrots
- 2 8-ounce cans crushed pineapple in its own juice, well drained

- 3 8-ounce packages Philadelphia-brand cream cheese, room temperature
- 3/4 cup (1 1/2 sticks) unsalted butter, room temperature
- 2 cups powdered sugar
- 3/4 cup canned sweetened cream of coconut (such as Coco López)
- 1 teaspoon vanilla extract
- 1/2 teaspoon (scant) coconut extract
- 14 whole dry-roasted macadamia nuts

- 2 garlic cloves, peeled and minced

350 oven Heat 2 T. evoo in a saute pan over medium heat, add the onions and garlic
- 4 T. evoo
- 2 oinons, diced (I like sweet)
- 6 cloves garlic, chopped
- 2 lbs. ground beef
- 4 eggs
- 1 1/2 c. bread crumbs
- 2 c. Parmesan
- 2 T. Worcestershire sauce
- 2 T. Balsamic vinegar
- 4 T. chopped fresh basil leaves
- 2 t. Chopped flat parsley
- 2 t. salt
- 1 t. black papper
- 2 c. marinara sauce

- 11/2 teaspoons dried thyme
- 11/2 teaspoons dried basil

- 1/4 cup sour cream
- 1 1/2 cups sugar
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon fresh ground nutmeg
- 1/8 teaspoon ground cloves
- 2 tablespoon all-purpose flour
- 1 teaspoon vanilla extract

Mix ONLY as directed, per the creator, Carine!!
- 1 . 6 turns of the salt grinder
- 2 . 6 turns of the pepper grinder
- 3 . 1 heaping teaspoon (from your stainless not a measuring spoon) of Maille Dijon Originale Mustard (it must be this brand and spelling!)
- 4 . 1/2 cup of red wine vinegar
- 5 . 1 cup of canola oil
- ( 2-1 ratio of canola oil to red wine vinegar if you expand the recipe to make more)
