- 4 chicken thighs
- 2 chicken breasts with skin and backbone, halved crosswise
- 2 teaspoons salt, plus more to taste
- 1 teaspoon freshly ground black pepper, plus more to taste
- 1/2 cup all purpose flour, for dredging
- 3 tablespoons olive oil
- 1 large red bell pepper, chopped
- 1 onion, chopped
- 3 garlic cloves, finely chopped
- 3/4 cup dry white wine
- 1 ( 28-ounce) can diced tomatoes with juice
- 3/4 cup reduced-sodium chicken broth
- 3 tablespoons drained capers
- 1 1/2 teaspoons dried oregano leaves
- 1/4 cup coarsely chopped fresh basil leaves
Double Chocolate Torte

For cake: Preheat oven to 325°F
- Cake:
- 8 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
- 1 cup unsalted butter
- 1 cup sugar
- 5 large eggs
- 1 tablespoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup all purpose flour
- Mousse:
- 1/2 cup unsalted butter, cut into pieces
- 4 large eggs, separated
- 1 cup whipping cream
- 1 tablespoon vanilla extract
- 8 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
- 1/2 cup plus 1 1/2 teaspoons sugar
- 2 cups fresh raspberries
- 2 tablespoons red currant jelly melted with 1 tablespoon water
- Red currant bunches (optional)

- 1/2 c. butter
- 2 eggs
- 1 c. sugar
- 2 bananas
- 1 1/2 c. flour
- 1/2 t. salt
- 1/2 t. baking powder
- 1/4 t. baking soda
- Frosting...
- 2 c. powdered sugar
- 1/2 c. chopped pecans or walnuts

Joe's Key Lime Pie

For the graham cracker crust: Preheat the oven to 350 degrees
- Graham Cracker Crust
- 1 paper-wrapped package graham crackers (1/3 of a 1-pound box) or 1 cup plus 2 1/2 tablespoons graham cracker crumbs
- 5 tablespoons melted unsalted butter
- 1/3 cup sugar
- Filling
- 3 egg yolks
- Grated zest of 2 limes (about 1 1/2 teaspoons)
- 1 (14-ounce) can sweetened condensed milk
- 2/3 cup freshly squeezed lime juice (if you get Key limes, use them: other wise use regular limes)
- Topping
- 1 cup heavy or whipping cream, chilled
- 3 tablespoons confectioners' sugar

Preheat the broiler and position the oven rack 5 inches from the heat
- 1 1/2 pounds Italian Fontina Val d'Aosta cheese, rind removed and 1-inch-diced
- 1/4 cup good olive oil
- 6 garlic cloves, thinly sliced
- 1 tablespoon minced fresh thyme leaves
- 1 teaspoon minced fresh rosemary leaves
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
