Baked Clams Oreganata

Preheat the oven to 450 degrees F
- 1 dozen littleneck clams, scrubbed
- 1 cup plain bread crumbs
- 2 cloves garlic, smashed and chopped
- 3 tablespoons finely chopped fresh oregano leaves
- 2 tablespoons finely chopped Italian parsley leaves
- Pinch crushed red pepper flakes
- Kosher salt
- 2 to 3 tablespoons extra-virgin olive oil
- 1/2 to 3/4 cup chicken stock
Mascarpone Filled Cake w/ berries

Cake, without cream, can be baked 1 day ahead
- For cake:
- 2 cups sifted cake flour (not self-rising; sift before measuring)
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 stick unsalted butter, softened
- 1 cup sugar
- 1 teaspoon pure vanilla extract
- 2 large eggs
- 1 cup well-shaken buttermilk
- For berries:
- 1/2 cup Fino (dry) Sherry
- 1/2 cup sugar
- 4 cups mixed berries, cut if large
- For cream:
- 8 ounces mascarpone (1 cup)
- 1 cup chilled heavy cream
- 1/4 cup sugar
- Garnish:
- confectioners sugar
Baked French Toast

Start 1 day ahead
- Praline Topping:
- loaf French bread (13 to 16 ounces)
- 8 large eggs
- 2 cups half-and-half
- 1 cup milk
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Dash salt
- Praline Topping, recipe follows
- Maple syrup
- 1/2 pound (2 sticks) butter
- 1 cup packed light brown sugar
- 1 cup chopped pecans
- 2 tablespoons light corn syrup
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- Combine all ingredients in a medium bowl and blend well. Makes enough for Baked French Toast Casserole.

Tomato, Mozzarella, Basil Bruchetta

Preheat oven to 375 degrees F
- (32-ounce) can whole tomatoes, drained
- 1 cup fresh basil leaves, washed and spun dry
- 4 tablespoons extra-virgin olive oil
- 6 cloves garlic, peeled
- Kosher salt and freshly ground black pepper
- 2 large French baquettes, sliced 1-inch thick (about 36 slices)
- 1 1/2 pounds fresh mozzarella cheese, sliced 1/4-inch thick

Preheat oven to 475°F. Line 2 large baking sheets with parchment
- Pizza dough
- 1/2 cup purchased marinara sauce
- 1 cup coarsely grated Fontina cheese
- 1/2 cup finely grated Parmesan cheese
- 1/3 cup coarsely grated mozzarella cheese
- 2 ounces crimini (baby bella) mushrooms, thinly sliced
- 2 ounces thinly sliced pancetta (Italian bacon), coarsely chopped
Greek Panzanella

Heat 3 tablespoons olive oil in a large saute pan
- For the vinaigrette:
- Good olive oil
- 1 small French bread or boule, cut into 1-inch cubes (6 cups)
- Kosher salt
- 1 hothouse cucumber, unpeeled, seeded, and sliced 1/4-inch thick
