Zucchini Chocolate Chip Cookies

- Combine in large bowl:
- 1 egg, beaten
- 1/2 cup butter, softened
- 1/2 cup brown sugar (or Sucanat)
- 1/3 cup honey
- 1 tablespoon vanilla extract
- 1 cup white flour
- 1 cup whole wheat flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 tsp cinnamon
- 1/4 tsp nutmeg
- Combine in a separate, small bowl and blend into liquid mixture:
- 1 cup finely shredded zucchini
- 12 oz chocolate chips
Scream Cheese Brownies

These are an easy Halloween treat…brownies with a cream cheese layer
- 1 brownie mix with ingredients required in mix (I like Betty Crocker's Triple Chunk Supreme or use half of this homemade brownie recipe)
- 8 ounces cream cheese, softened
- 5 tablespoons butter, softened
- 1/2 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 2 tablespoons flour
- orange food coloring (optional)
Limoncello Bundt Cake

Preheat oven 325 degrees F
- 18 ounce white, yellow or lemon cake mix
- 4 serving-sized instant lemon or vanilla pudding mix
- 4 eggs
- 1/2 cup plus 2 tablespoons water, divided
- 1/2 cup vegetable oil
- 3/4 cup limoncello (lemon-flavored liqueur), divided
- 1/4 cup butter
- 1/2 cup sugar
- 1/2 cup lightly toasted sliced almonds
Shepherd's Pie with Cauliflower Topping

Instructions Preheat the oven to 400 degrees
- 1 head cauliflower, chopped into florets
- 2 tablespoons fat (lard, tallow, ghee, coconut oil, etc)
- 1 small onion, diced
- 2 celery ribs, diced
- 2 carrots, diced
- 2 cloves garlic, minced
- 1 pound ground beef or lamb
- 1/4-1/2 cup homemade beef broth
- 1 tablespoon homemade ketchup or tomato paste (omit if you don’t have a GAPS-legal or Paleo option)
- 2 tablespoons chopped parsley
- salt and pepper to taste
- 2 tablespoons fat (lard, tallow, ghee, etc)
- 1/2 cup shredded GAPS-legal cheese (omit for Paleo)
Marinated Garlic, Red Wine and Rosemary Lamb Kebabs with Minted Lemon Yoghurt

Makes 4 servings of 3 skewers each
- Marinade:
- 400 g Lamb, cubed
- 1/2 cup of Zucchini, thickly sliced
- 1 Red Onion, quartered
- 1 large Red Pepper (capsicum) cut into square chunks
- Juice of 1 lemon
- 1 1/2 tbsp of Extra Light Olive Oil
- Dash each of Salt and Pepper
- 3 cloves Garlic, crushed
- 3/4 cup of Red Wine
- 1 tbsp fresh or dried Rosemary
- Yoghurt dressing:
- 200 g Natural, Unflavoured Low-Fat Yoghurt
- 1/2 tbsp Fresh Chopped Mint Leaves
- 1/4 cup Cucumber, finely chopped
- 1 tsp Lemon Juice
- Additional:
- 12 Bamboo/Metal skewers

- 1/3 cup rolled oats
- 1/3 cup greek yogurt
- 1/2 cup milk
- 1 tbsp chia seeds
- 1/2 cup frozen berries

- 2 to 2 1/2 pounds baby back pork ribs

- SWEET AND SPICY BARBECUE SAUCE

- 1/4 cup finely diced onion
- 1/2 teaspoon ground cumin
- 1/2 cup ketchup, try our homemade ketchup recipe
- 1 tablespoon hot chili sauce (suggestion Sriracha)
- 2 tablespoons light brown sugar
- 1 tablespoon apple cider vinegar
