- 2 1/2 cups cake flour

- 1 stick unsalted butter, at room temperature
- 1 1/2 cups granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 1/4 cup milk
- Tres Leches Mix, recipe follows
- Whipped Cream Mascarpone Frosting, recipe follows
- One 12-ounce can evaporated milk
- Half 14-ounce can sweetened condensed milk
- 3/4 cup heavy cream
- 4 cups heavy cream
- 1 teaspoon vanilla extract
- 3/4 cup confectioners' sugar
- 4 ounces mascarpone cheese
Fierce Fried Corn

In a large nonstick skillet, melt the butter over low heat
- 4 tablespoons (1/2 stick) butter
- 1 jalapeno, seeded and finely chopped, optional
- 4 cups fresh corn kernels (scrape "milk" and any bits of kernels from cob as well)
- Salt and freshly ground black pepper
Granola Goodness

1. Combine ricemilk, bananas, granola, and wheat germ in a blender and puree to a smooth texture
- 1 c. rice milk
- 2 bananas
- 1 c. vanilla flavored granola

Jamie Oliver's Minestrone Soup

A nice crusty roll is just about all you need to turn this into a delicious meal
- 1 tablespoon olive oil
- 2 strips bacon, finely chopped
- 1 clove garlic, peeled and chopped
- 1 red onion, peeled and finely chopped
- 2 carrots, washed and chopped
- 2 sticks celery, chopped
- 1 zucchini, chopped
- 1 small leek, washed and chopped
- 1/2 teaspoon dried oregano
- 1 bay leaf
- 2 x 13.5 ounce cans chopped plum tomatoes
- 1 large potato, scrubbed and diced
- 1 x 15.5 ounce can garbanzo, drained and rinsed
- 4 cups (1-quart container) low-sodium vegetable broth
- Large handful curly kale, stalks removed, chopped
- 1/2 cup mixed small pasta shapes a bunch of basil (optional) 1/8 teaspoon sea salt

- 5 tablespoons grated Parmesan cheese; optional

Sweet Glazed Butterflied Chicken

Preheat the oven to 375 degrees F
- Ingredients 1
- 1 (5 pound) chicken, spine removed and butterflied
- Kosher salt and freshly ground black pepper
- 1/4 cup olive oil
- 3 tablespoons butter
- Ingredients 2
- 2 tablespoons grated onion (use the smallest side on a box grater, or use a rasp)
- 2 cloves garlic, grated (on a rasp)
- 1/8 teaspoon ground allspice
- 1/4 cup light brown sugar
- 1 tablespoon stone-ground mustard
- 1/4 teaspoon hot sauce (recommended: Frank's Red Hot sauce)
- 2 teaspoons apple cider vinegar
Sweet Potato Pie with Cream Cheese Swirl

Preheat oven to 400°F. Tightly wrap sweet potatoes in foil and place on a baking sheet
- 2 medium-large sweet potatoes
- 6 ounces crisp gingersnap cookies (26-28 small cookies)
- 2 tablespoons canola oil
- 3/4 cup packed light brown sugar
- 3/4 cup nonfat vanilla Greek yogurt, divided
- 2 large eggs
- 1 large egg yolk
- 3/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 cup (2 ounces) reduced-fat cream cheese (Neufchâtel)
- 2 tablespoons confectioners’ sugar
- 1/4 teaspoon ground ginger

Instructions Place a small saucepan over medium low heat
- 6 T. + 1 t. lemon juice
- 6 T. honey
- pinch sea salt
- 1 t. lemon zest
- 1 egg + 2 egg yolks
- 1 1/2 c. oat flour (I just grind GF oats into flour)
- 2 t. natural granulated sugar
- 1/2 t. sea salt
- 1/4 c. olive oil
- 4-5 T. cold water, as needed
- 5 c. apples (about 3-4 apples), peeled and sliced
- 1 T. lemon juice
- 1 T. maple syrup
- 3/4 c. oat flour (I grind Country Choice Organic Oats into flour)
- 1/2 c. quick oats (I use Country Choice Organic Oats)
- 2 T. oat bran
- 1 t. cinnamon
- 1/4 t. nutmeg
- 1/4 t. sea salt
- 3 T. coconut sugar (or another natural granulated sugar)
- 4 T. softened coconut oil
Potatoes That Taste Better than the Chicken

Directions Preheat oven to 450 degrees
- 6 tablespoons unsalted butter
- 6 tablespoons grapeseed oil
- 2 pounds Yukon gold potatoes, peeled and cut into 1-inch pieces
- 1 whole (2 1/2- to 3-pound) chicken, wings removed
- Coarse salt and freshly ground black pepper
- 1 chicken liver
- 4 sprigs fresh rosemary
- 4 sprigs fresh thyme
- 1 head garlic, halved crosswise
- Fleur de sel, for serving
Spicy Orange Chicken Wings

1. Mix together sauce ingredients into a sauce pan
- Spicy Orange Chicken Wings Ingredients (enough for about 5 lbs of wings):
- 2 big tablespoons Sambal, or other Asian-style chili paste to taste, or may sub red pepper flakes to taste
- 1 cup orange jam or marmalade, (strain if contains an excess of orange rind pieces)
- 1/3 cup rice vinegar
- 1/4 cup hoisin sauce
- 1 tablespoon soy sauce
- "oven-fried" Buffalo chicken wings
- Suggestions for optional additions:
- finely minced garlic cloves
- finely grated fresh ginger, optional
- minced green onions
- toasted sesame seeds
