- 8 oz. packed dark brown sugar

- 1 T black pepper
- 2 t chili powder
- 2 t garlic salt
- 1 t white pepper
- 1 t onion salt
- 1 t ground cumin
- 5 to 8 lb pork shoulder butt
- 6 C pecan wood chips
- 1 recipe Shed Grill-Off Sauce
- 10 buns, split and toasted

Melt butter. When cool, mix in white and brown sugar
- 2 C butter
- 2 C brown sugar
- 2 C sugar
- 1 t baking powder
- 1 t baking soda
- 1 t salt
- 4 eggs
- 2 t vanilla
- 1/2 t cinnamon
- 1/4 cardamom
- 4 1/2 C flour
- 3 C white chocolate chips
- 3 C rolled oats

- 1/3 C butter, softened
- 2 C sifted cake flour
- 1 C sugar
- 2 t baking powder
- 1/2 t salt
- 3/4 C milk
- 1 egg
- 1 t vanilla extract
- 1/2 C chopped pecans
- PRALINE TOPPING
- 1/4 C melted butter
- 3/4 C brown sugar
- 18 pecan halves
Jeweled Pork Roast

- 1 (8 ox) can water chestnuts, drained and chopped
- 1 (4 oz jar pimentos
- 1 (10 3/4 oz) can condensed cream of celery soup
- 1 C mayonnaise
- 1 (6 oz) box long grain wild rice, cooked according to package
- 1 C grated sharp cheddar
- salt

Heat oven to 375. Butter a 9 x 13 inch or some other shallow 3 quart baking dish
- 2 T unsalted butter, plus more for the baking dish
- 1 medium onion, finely chopped
- 2 C heavy cream
- 2 C whole milk
- 1 bay leaf
- 1 t fresh thyme leaves
- 1/4 t nutmeg
- kosher salt and black pepper
- 4 pounds russet potatoes (8 medium) peeled sliced 1/8 inch thick
- 6 ounces Gruyere or cheddar, grated (about 1 1/2 C)
