Champagne Risotto for Two

Please, whatever you do, don’t open a bottle of champagne specifically for this
- 1 small stick of celery, cup when chopped
- 2 leeks, 1 cup when white part is chopped
- stick unsalted butter
- 1 cups champagne
- 1 teaspoon olive oil
- 3 cups chicken (or vegetable) stock
- 1 1/3 cups carnaroli or arborio rice
- cup Parmesan, grated
- ground white pepper
Brazo de Gitano (Gypsy's Arm) Cake Covered in Chocolate

The "Brazo de Gitano," literally translates to "Gypsy's Arm
- 2-3 * 2-3 Tbsp vegetable shortening
- 1 1/4 * 1 1/4 cups (5 oz) sifted unbleached white flour
- 3/4 * 3/4 cup (5 oz) granulated sugar
- 6 * 6 large eggs
- * zest from 1 lemon
- 1/2 * 1/2 cup peach jam at room temperature
- 1/2 * 1/2 cup strawberry jam at room temperature
- 1-2 * 1-2 cups of whipped cream or 1 can whipped cream
- 3 * 3 oz baking chocolate
- 3 * 3 Tbsp powdered sugar
- 4 * 4 oz milk
- 1 * 1 tsp butter
Barley-Stuffed Cabbage Rolls with Pine Nuts and Currants

- 1 large head green cabbage, cored
- 1 tablespoon olive oil
- 1 1/2 cups finely chopped onion
- 3 cups cooked pearl barley
- 3 ounces crumbled feta cheese (about 3/4 cup)
- 1/2 cup dried currants
- 2 tablespoons pine nuts, toasted
- 2 tablespoons chopped fresh parsley
- 1/4 teaspoon salt, divided
- 1/4 teaspoon freshly ground black pepper, divided
- 1/2 cup apple juice
- 1 tablespoon cider vinegar
- 1 (14.5-ounce) can crushed tomatoes, undrained
Chicken Paleo “Sandwich”

I had some left over Spice Rub Slow Cooked Chicken so I made myself a sandwich out of the leftovers for lunch today
- 2 giant portobello mushrooms, stems and gills (underside of the cap) removed
- 1 cup cooked chicken, shredded
- 1/4 cup grilled onions
- 3 slices bacon
- 1 cup fresh arugula
- 2 tbsp Paleo Mayo
- 2 tbsp olive oil
Garlicky Grilled Orange Chicken

Use a large knife to split the chickens down the middle into two halves
- 2 whole chickens - (abt 3 1/2 lbs ea)
- 1 1/2 cups fresh orange juice
- 1 small white onion
- 8 garlic cloves -- roughly chopped
- 1/2 teaspoon dried thyme leaf
- 1/2 teaspoon marjoram
- 1/2 teaspoon oregano
- 4 bays leaves -- broken
- 1 teaspoon salt
- 1/2 teaspoon freshly-ground black pepper
- Spritzer of oil
- Grilled green onions -- (optional), garnish
Classic Fajitas

Preheat grill with all burners set to high and the lid down until the grill is very hot, about 15 minutes
- 1 flank steak - (abt 2 1/2 lbs)
- 1/4 cup lime juice
- Salt -- to taste
- Freshly-ground black pepper -- to taste
- 1 large onion -- peeled, and cut
- into 1/2"-thk rounds
- 2 large red or green bell peppers -- cored, seeded,
- and cut into large wedges
- 16 flour tortillas - (10" dia)
- Salsa -- for serving
- Guacamole -- for serving

- 1 garlic clove -- peeled, and
- crushed through a press
- Freshly-ground black pepper -- to taste
- 4 medium portobello mushrooms - (1 1/4 lbs total) -- stemmed
- 5 large ripe plum tomatoes -- halved lengthwise,
- with interiors scooped out
- Salt -- to taste
- 2 cups wood chips, preferably hickory -- (optional)

Basic Barbecue Rub

Combine ingredients in a mixing bowl; stir to mix
- 1/4 cup brown sugar - (packed)
- 1/4 cup sweet paprika
- 3 tablespoons freshly-ground black pepper
- 3 tablespoons coarse salt
- 1 tablespoon hickory-smoked salt
