- 1 cup Cabernet Sauvignon

- 2 tablespoons minced shallots
- 2 tablespoons minced fresh ginger
- 2 tablespoons sugar - (to 3)
- 1 tablespoon butter or margarine
- 6 salmon steaks, 1" thk - (6 to 7 oz ea)

- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1/4 tsp smoked paprika
- 1/4 tsp rosemary
- Gravy:
- 1 - 1 1/2 cups goat's milk or unsweetened soy milk
