Rhubarb and Raspberry Crostata

- 1 cup unbleached all-purpose flour
- 1/2 cup whole wheat flour
- 1 1/2 tablespoons sugar
- 1/2 teaspoon kosher salt
- 3/4 cup (1 1/2 sticks) chilled unsalted butter, cubed
- 1 large egg
- 1 tablespoon whole milk
- 1/4 cup cornstarch
- 4 cups 1/2"-thick slices rhubarb
- 1 6 ounce container fresh raspberries
- 1/3 cup sugar
- 1 large egg, beaten
- Raw sugar
- Sweetened whipped cream or vanilla ice cream (for serving)
Brazo de Gitano

This recipe is from my grandmother
- 5 * 5 eggs, separated
- 1/4 * 1/4 cup granulated sugar
- 1/4 * 1/4 cup flour
- 1/4 * 1/4 cup cocoa powder
- 1 * 1 teaspoon vanilla extract
- 4 * 4 tablespoons sifted confectioners' sugar
- 1 * 1 cup heavy cream, whipped
- 1 1/4 * 1 1/4 teaspoons rum extract
- 1 * 1 tablespoon superfine sugar (Put desired amount of granulated sugar in a blender and blend at high speed for about 30 seconds)
Easy Chicken Enchiladas

We say chicken, but steak would be just as good if you have it on hand!
- Enchilada Sauce:
- 2-3 cups of cooked chicken breast, steak or turkey
- 1 ½ cups cheddar cheese
- ¼ cup of cream or half & half
- 1 scallion
- 3 egg whites
- 1 8oz can tomato sauce
- 2 cups water
- 2 tbsp olive oil
- 2 tbsp butter
- 1 tsp cornstarch
- ½ tsp cumin
- ½ tsp unsweetened cocoa powder
- ½ tsp garlic powder
- 2 tbsp chili powder
Heirloom Tomato, Mozzarella and Basil Salad

- 16 fresh basil leaves
- 4 large (about 2 pounds) heirloom tomatoes , cored and cut into 1/4-inch slices
- Coarse kosher salt , to taste
- Freshly ground black pepper , to taste
- 6 ounces fresh mozzarella cheese , cut into thin slices
- 2 Tbsp. white or golden balsamic vinegar
- 2 Tbsp. extra-virgin olive oil
- 2 Tbsp. minced red onion
Creamy Falooda Milkshake

Soak the basil seeds in water for 30 mins - 2 hours
- 2 cups Whole Milk or Coconut Milk
- 1/2 - 1 tsp Basil Seeds (Tukmaria Seeds)
- 1/2 cup Vanilla Ice Cream
- handful Vermicelli (Falooda Noodles)
- 5 tbsp Rose or Saffron Syrup (Saffron Syrup recipe below)
- 1 1/2 tbsp Sugar, or to taste
- 1 pinch Cardamom Powder
- 1 tsp Pistachios (coarsely ground), to garnish
- 2 1/2 scoops Vanilla Ice Cream or Indian Kulfi, for serving
- optional: Strawberry Jello - Readymade, or Homemade
Brandy Alexander Milkshake

Combine first 3 ingredients in electric blender and process until smooth
- 2 cups vanilla ice cream
- 1 1/2 oz Brandy
- 1 oz dark creme de cacao
- cocoa
- nutmeg
Roasted Vegetable Mac and Cheese

Heat the oven to 400 degrees
- 1 pound(s) plum tomatoes
- 6 cup(s) broccoli florets
- 2 tablespoon(s) extra-virgin olive oil
- 3 tablespoon(s) butter
- 3 tablespoon(s) coconut flour
- 4 cup(s) milk, warm
- 2 1/3 cup(s) grated aged Asiago
- 2 1/2 cup(s) grated sharp Cheddar
- 2 tablespoon(s) Dijon mustard
- 1 1/2 teaspoon(s) salt
- 2 teaspoon(s) fresh black pepper
- 2 tablespoon(s) chopped fresh thyme
- 1 large spaghetti squash, cooked
Couscous Salad

In a medium saucepan over medium-high heat, bring the stock or broth to a boil
- 2 1/4 cups chicken stock or broth
- 1 1/2 cups couscous
- 2 tablespoons minced fresh parsley
- 1 tablespoon minced fresh mint
- 1 garlic clove -- minced
- 1/4 cup minced scallions
- 1/4 cup diced cucumber
- 1/4 cup diced bell pepper
- 1/4 cup diced zucchini
- 1/4 cup freshly-squeezed lemon juice
- 1/4 cup extra-virgin olive oil
- Salt -- to taste
- Freshly-ground black pepper -- to taste
Grilled Plantains With Citrus Glaze

Light a grill fire. Combine the orange juice, lime juice, and brown sugar in a small saucepan
- 1/2 cup orange juice
- 2 tablespoons lime juice
- 1 tablespoon brown sugar
- 2 large ripe plantains
- = (yellowish black or black)
- 1 tablespoon canola
- = (or other tasteless oil)
- Salt -- to taste
Slow Cooker Iced Thai Tea Concentrate

This is much easier to clean up if you put the spices in a re-usable muslin tea bag
- 6 cups (1500ml) water
- 1 red beet , quartered (optional for color)
- 2 whole cinnamon sticks, about 3 inches long
- 4 whole star anise
- 4 whole cloves
- 1 teaspoon cardamom seeds
- 10 teabags black, green, or roobios (or about 8 to 10 teaspoons of loose tea in a very large tea ball or muslin tea bag)
- 1 tablespoon vanilla extract
- 2 teaspoons orange flower water
- 1/2 to 1 cup (100 to 200 g) sugar (or other sweetener like maple syrup, stevia or agave nectar, or leave unsweetened if you prefer)
