- 1 can (4 oz) Pillsbury® refrigerated crescent dinner rolls (4 rolls)
- 2 tablespoons finely chopped walnuts
- 1 tablespoon granulated sugar
- 1 teaspoon milk
- 1 container (6 oz) Yoplait® Original 99% Fat Free banana crème yogurt
- 1 snack-size container (3.5 oz) banana pudding
- 1 medium banana, sliced
- Whipped cream topping (from aerosol can), if desired
- Powdered sugar, if desired

Preheat oven to 400 F. Line two baking sheets with parchment paper
- 1 1/4 cups (5 oz) whole wheat flour (I used white whole wheat)
- 1 1/2 tablespoons sugar
- 1/2 teaspoon salt, plus extra for topping
- 1/4 teaspoon paprika
- 4 tablespoons (1/2 stick) unsalted butter
- 1/4 cup water
- 1/4 teaspoon vanilla
Sweet Potato Pecan Bundles

Boil the sweet potato, unpeeled, for about 30-40 minutes, or until soft
- 1 sweet potato
- 1/4 cup butter, softened
- 2/3 cup sugar
- Seeds of 1 whole vanilla bean
- 1/4 teaspoon cinnamon
- 1/2 cup ground pecans
- 6 sheets phyllo dough
- 2 tablespoons butter
Chipotle Mac N Cheese with Bacon

Heat the oven to 375 degrees
- 2 cups of dry elbow pasta
- 2 cups of milk
- 1 cup of cottage cheese
- 1 chipotle chile in adobo
- 1 teaspoon mustard powder
- 1 clove of garlic, roughly chopped
- Pinch of cumin
- Salt and black pepper to taste
- 3 cups of shredded cheese, a mix of cheddar and Monterey Jack
- 1/4 cup of crumbled cotija cheese (optional, but delicious!)
- 4 pieces of cooked bacon, chopped
- 1 tablespoon of butter

- 2 tsp minced fresh thyme, or 1/2 tsp dried
- 1/4 cup all-purpose flour
- 5 cups low-sodium chicken broth
- 1 pound red potatoes, scrubbed and cut into 1/2-inch pieces
- 2 carrots, peeled and sliced 1/4-inch thick
- 2 bay leaves
- 1 lb boneless, skinless chicken thighs, trimmed of excess fat
- salt and pepper
- 1 cup frozen corn kernels
- 1 (15-oz) can creamed corn
- 1/2 cup heavy cream or half-and-half
- 2 tsp minced chipotle chiles in adobo

- Peppers:
- Canola oil
- 2 tablespoons olive oil
- 1 shallot, diced
- 2 tablespoons garlic, minced
- Salt and freshly ground black pepper
- 3/4 pound chorizo sausage, finely chopped
- 1 cup shredded smoked Cheddar
- 12 jalapenos, stems removed and hollowed out
- 1 cup buttermilk
- 2 eggs
- 1 1/2 cups all-purpose flour
- 1 1/2 cups panko bread crumbs
- Sweet Corn Puree:
- 3 tablespoons butter
- 1 cup fresh or frozen corn kernels
- 1 lemon, juiced
- Salt and freshly cracked black pepper
- 1 teaspoon sugar
- 1/4 cup chicken stock
- 2 tablespoons sour cream

- 1 pkg (16 ounces) frozen sliced strawberries in syrup thawed
- 1 cup heavy cream
- 2 tablespoons cornstarch
