Sour Cream Chocolate Layer Cake

Position a rack in middle of oven and preheat oven to 350°F
- Chocolate cake:
- 1/2 cup unsweetened cocoa powder
- 1/2 cup boiling water
- 2 1/4 cups sifted flour
- 1 1/2 teaspoons baking soda
- 1/4 teaspoon salt
- 1 1/2 sticks (6 oz.) unsalted butter, at room temperature
- 1 3/4 cups sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 1 1/3 cups sour cream
- Bittersweet-chocolate frosting:
- 6 ounces bittersweet chocolate, chopped
- 1/2 cup sugar
- 4 egg yolks
- 3/4 teaspoon vanilla extract
- 2 sticks (1/2 lb.) unsalted butter, cut into 16 pieces, at room temperature
- 2 ounces dark and white chocolate shavings for garnish, optional
Shrimp and Crab Gumbo

Place flour in a small skillet; cook 5 minutes over medium heat or until flour is brown, stirring constantly
- 1/3 * 1/3 cup all-purpose flour
- 3 * 3 bacon slices, diced
- 2 * 2 cups finely chopped onion
- 1 1/2 * 1 1/2 cups finely chopped green bell pepper (about 1 large)
- 4 * 4 celery stalks, thinly sliced
- 4 * 4 garlic cloves, minced
- 1 * 1 cup water
- 2 * 2 (14-ounce) cans fat-free, less-sodium chicken broth, divided
- 2 * 2 teaspoons salt-free Cajun seasoning
- 1/2 * 1/2 teaspoon salt
- 1/4 * 1/4 teaspoon crushed red pepper
- 1 * 1 (16-ounce) bag frozen cut okra, thawed
- 1 * 1 pound peeled and deveined medium shrimp
- 2 * 2 (6-ounce) cans lump crabmeat (such as Chicken of the Sea), drained
- 3 * 3 cups hot cooked long-grain white rice
- * Hot pepper sauce (optional)
Roasted Chipotle Chicken

Preheat the oven to 425 degrees and line a 9x13 pan with foil
- 1/2 cup mayonnaise
- 1 teaspoon lime zest
- 2-4 canned chipotle chiles (depending on how spicy you like it)
- 1/4 cup cilantro, chopped
- 1/4 teaspoon cumin
- 1/4 teaspoon cayenne
- Salt and black pepper to taste
- 4 chicken legs (thighs with drumsticks), skin on or off—your choice
- Lime wedges for serving
Spiced Pumpkin Cupcakes

To make the cupcakes, preheat the oven to 350°F
- For the cupcakes:
- 2 2/3 cups all-purpose flour
- 2 tsp. baking soda
- 2 tsp. baking powder
- 2 tsp. ground cinnamon
- ¼ tsp. freshly grated nutmeg
- ¼ tsp. ground cloves
- 1 tsp. salt
- 1 (15 oz.) can pumpkin puree
- 1 cup sugar
- 1 cup packed light brown sugar
- 1 cup canola or vegetable oil
- 4 large eggs
- For the frosting:
- 8 oz. cream cheese
- 5 tbsp. unsalted butter, at room temperature
- 2 tsp. vanilla extract (I prefer clear)
- 2 ½ cups confectioners’ sugar, sifted

Mix cake mix, pudding mix, milk, oil, eggs, and 1 Tbl cinnamon
- CAKE
- 1 pkg (18.25 oz) yellow cake mix
- 1 pkg (3.4 oz) instant vanilla pudding mix
- 1 1/4 C milk
- 3/4 C vegetable oil
- 3 large eggs
- 1 Tbl + 1/4 tsp ground cinnamon
- 1 Tbl sugar
- CINNAMON CREAM CHEESE FROSTING
- 1 pkg (8 oz) cream cheese, softened
- 4 Tbl butter, softened
- 3 C powdered sugar
- 1 tsp ground cinnamon
