Crunchy Cranberry Cinnamon Chex Mix

1. Mix sugar and cinnamon
- 1/4 cup sugar
- 1 teaspoon ground cinnamon
- 1/4 cup butter or margarine
- 1 1/2 cups Corn Chex® cereal
- 1 1/2 cups Rice Chex® cereal
- 1 1/2 cups Wheat Chex® cereal
- 1/2 cup dried cranberries, dried cherries or raisins
Cherry Limeade Cupcakes

Preheat oven to 350 F degrees
- Cake
- 5 1/4 cups flour*
- 3/4 cup corn starch*
- 1 tsp salt
- 2 tsps baking powder
- 1 tsp baking soda
- 2 cups (4 sticks) unsalted butter, room temperature
- 2 cups sugar
- 2 limes, zested and juiced
- 10 oz can of limeade concentrate or lime margarita concentrate, thawed and at room temperature
- 6 eggs
- 1 cup milk
- 1/3 cup hot water
- NOTE: This combo of corn starch and flour is to make cake flour. If you have cake flour on hand, use 6 cups of it.

- * 2 tablespoons water
- * 3 cups hulled strawberries
- * 2 tablespoons fresh lemon juice
- * 1 (750-milliliter) bottle prosecco or other sparkling wine, chilled
Baked Mini Cake Doughnuts with Maple Glaze

Preheat oven to 425*F. Spray mini doughnut pan with nonstick cooking spray
- 1 1/4 cups all purpose flour
- 1/2 cup granulated sugar
- 1 1/4 teaspoons baking powder

- 1/2 cup buttermilk (or 1/2 cup milk plus 1 teaspoon white vinegar, mixed and set aside)

- 1/4 cup butter
- 2/3 cup packed brown sugar
- 1 Tbsp creme de banana liqueur

ombine all meatball ingredients and mix together until combined
- # Meatballs:
- # 1 lb ground beef
- # 1 lb ground pork
- # 1 sm onion, diced
- # 2 eggs, lightly beaten
- # 1/3 cup milk
- # 1 cup breadcrumbs
- # 3/4 tsp salt
- # 1/2 tsp black pepper
- # Sauce:
- # 2 cups cold water
- # 3 tbsp cornstarch
- # 1 tsp apple cider vinegar
- # 1 heaping tbsp brown sugar
- # 1 1/2 cups pure Vermont maple syrup
- # 4-5 (canned) chipotle peppers in adobo sauce, chopped

- 1 * 1 teaspoon bottled minced garlic
- 1 * 1 pound lean ground beef
- 1 * 1 large egg
- * Cooking spray
- 2 * 2 cups cabbage-and-carrot coleslaw
- 1 * 1 tablespoon reduced-fat mayonnaise
- 1 * 1 tablespoon reduced-fat sour cream
- 1 * 1 teaspoon sugar
- 1 * 1 teaspoon cider vinegar
- 1/8 * 1/8 teaspoon salt
- 1/8 * 1/8 teaspoon black pepper

- cheesecake filling:
- 1 1/2 lb. (24 oz) cream cheese softened
- 3/4 cup white sugar
- 3 eggs
- 4 mashed bananas, really ripe!
- 2 ts. good quality vanilla
- 1 ts. fresh lemon juice for the bananas
- crust ingredients:
- 2 cups graham cracker crumbs
- 3 TB dark brown sugar
- 1 stick unsalted butter, melted

- 1 Tbsp bread crumbs
- 1 Tbsp onions, minced
- 1 Tbsp parmesan cheese, grated
- 1 Tbsp salt
- 2 Tbsp parsley, minced
- 12 mushroom stems, chopped fine
- 12 mushroom caps
- 1 egg, beaten
- Louisiana hot sauce, to taste
