1. In a 2- to 3-quart pan, combine rice and 2 3/4 cups water

Pink Champagne Cake

Let egg whites stand at room temperature for 30 minutes
- 6 egg whites
- 3 cups sifted all purpose flour
- 1 1/2 teaspoon baking powder
- 3/4 teaspoon baking soda

Espresso Chocolate Truffles

1. Chop chocolate into small chunks and put in a heatproof bowl
- For the coating:
- 8 ounces good quality bittersweet or semisweet chocolate, 62% cacao or higher
- 3 tablespoons unsalted butter
- 1 cup heavy cream
- 1 tablespoon light corn syrup
- 1 tablespoon instant espresso powder
- 8 ounces chopped white chocolate (Don’t use white chocolate chips for this. They are not a pure product and will not melt properly.)
- Roasted espresso beans and melted dark chocolate for garnish, if desired

- 2 1⁄4 tsp. (1 envelope) unflavored gelatin
- 2 Tbs. cold water
- 1 cup milk
- 1 ⁄2 cup sugar
- 3 egg yolks
- 2 tsp. brandy or Cognac
- 1 tsp. vanilla extract
- 1 ⁄8 tsp. freshly grated nutmeg
- 1 cup heavy cream

Preheat the oven to 350 degrees F
- TOASTED CROUTONS:
- 1 pound lump crabmeat, picked over for shells and cartilage
- 1 teaspoon chopped garlic
- 1/2 cup chopped pickled jalapenos
- 1/4 pound Monterey Jack cheese with jalapenos, grated
- 1 teaspoon Worcestershire sauce
- 1 teaspoon hot sauce

- 1 cup chopped fresh pineapple

Put sugars & milk in heavy bottom pan & cook to soft ball stage
- 1 1/4 cups of sugar
- 3/4 cups of brown sugar
- 1/2 cup of evaporated milk
- 4 tablespoons butter
- 1 tablespoon vanilla
- 1 1/2 cups pecans
Rock & Roll Shrimp Enchilada Soup

1. In a pot bring chicken broth to a boil
- 1 lb medium cooked Shrimp. Peel them. You can chop them if you like.
- 5 cups Chicken Broth
- 6 oz. Tortilla Chips (about 4 cups)
- 1 (12oz) can of diced Tomatoes
- 1 (4oz) can of Green Chiles, fresh ones if you want
- 2 T Butter
- 1 medium White or Sweet Onion, chopped
- 1-3 Jalapenos, finely chopped
- 3 cloves Garlic, minced
- 1 1/4 cups Sour Cream (low or nonfat will work fine
- 1/4 cup chopped fresh Cilantro
- 1 tsp Black Pepper
- 1 tsp Salt
- For Serving***
- Shredded Cheese. Mexican or Taco Blend is the best
Tin Roof Bars

In the bowl of a mixer, beat butter, milk and vanilla on medium-low speed until smooth
- For the brownie layer:
- 1 box dark chocolate fudge cake mix
- 1/3 cup evaporated milk
- 1 stick of butter, melted
- Preheat oven to 350. Line an 8×8 or 7×11 pan with foil and spray with cooking spray.
- In a large bowl, mix ingredients together until fully combined. Pat evenly into prepared pan and bake for about 20 minutes, until it puffs up and a toothpick inserted in the middle comes out clean.
- Place on a rack until completely cool.
- For vanilla layer:
- 1 stick butter, softened
- 2 cups powdered sugar
- 3 Tablespoons milk
- 1 teaspoon vanilla bean paste (or equal amount of vanilla extract)
- 1 cup mini marshmallows
- 1 cup chocolate covered peanuts, coarsely chopped
