Grilled Beer Brined Chicken

1Oven Directions: Make chicken as directed through step 3
- Brine and Chicken
- 2 cups water
- 1/4 cup kosher (coarse) salt
- 1/4 cup packed brown sugar
- 4 cans or bottles (12 oz each) beer or nonalcoholic beer, chilled
- 2 cut-up whole chickens (3 to 3 1/2 lb each)
- Barbecue Rub
- 1 tablespoon paprika
- 1 teaspoon table salt
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon pepper
- 1/4 cup vegetable oil

To prepare the crust Preheat oven to 350 degrees
- For the crust
- 1 1/2 cups vanilla wafer crumbs
- scant 1/2 cup packed brown sugar
- 1/2 teaspoon ground ginger

- For the scones:
- 2 cups all-purpose flour
- 1/3 cup packed brown sugar
- ½ tsp. ground ginger
- ½ tsp. ground cinnamon

- ¼ tsp. salt
- 8 tbsp. cold, unsalted butter, cut into pieces

- 2 cups firmly packed brown sugar
- 1 cup granulated sugar
- 4 large eggs
- 4 teaspoons vanilla extract
- 12 ounces coarsely chopped semisweet chocolate
Steaks in Brandy-Cream Sauce

1. In a large skillet, heat olive oil over medium heat
- 1 * 1 tablespoon olive oil
- 2 * 2, 1-1/2-inch-thick beef tenderloin steaks (8 ounces each)
- * Salt and pepper
- 2 * 2 cups sliced fresh mushrooms
- 2 * 2 green onions, thinly sliced
- 1/3 * 1/3 cup brandy

I used a blender, you can use a food processor
- 3 TBS spicy whole grain Mustard
- 3 TBS BBQ Sauce (can use ketchup)
- 1/2 cup Olive Oil
- 1/2 cup chopped Green Onions
- 1/2 cup chopped Yellow Onion
- 1/2 cup chopped Celery
- Juice of 2 Lemons
- Zest from 1 Lemon
- 2 TBS Parsley
- 2 TBS prepared Horseradish
- 1/2 tsp Cayenne Pepper

.Place all the ingredients in a food processor or large bowl
- For the Dough:
- 4 cups flour, plus more for dusting
- 6 whole eggs
- 4 tablespoons water
- 2 teaspoon salt, or to taste
- For the Filling:
- 1 small pumpkin (about 4 pounds), or 2- 15 ounce cans of pumpkin puree*
- 1 cup ricotta cheese
- 1/4 cup parmesan cheese, grated
- 1 teaspoon ground nutmeg
- 1 dash ground cloves
- Cinnamon, to taste
- Salt and Pepper, to taste
