Position racks in the upper and lower thirds of the oven and preheat to 350 degrees F
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking soda
- Pinch of salt
- 1 stick unsalted butter, softened
- 1/4 cup packed light brown sugar
- 1/4 cup packed dark brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 1/2 cups rolled oats
- 1/2 cup chopped dried apricots
- 1/2 cup chopped walnuts
- 1/2 cup white chocolate chips

- 1 cup firmly packed light-brown sugar
