  • 1 cup pearl onions, peeled
  • 1-1/2 cups crushed tomatoes
  • 3 cups chicken broth
  • 2 tsp. dried oregano
  • 1 small butternut squash, peeled, seeded, and cut into 1-inch chunks
  • 3 carrots, peeled and sliced into 2-inch pieces
  • 3 parsnips, peeled and sliced into 2-inch pieces
  • 1 small fennel bulb, trimmed and halved
  • 1/2 pound Brussels sprouts, trimmed and halved
  • sea salt and pepper, to taste
