Fall Vegetables and Italian Sausage Stew

Heat butter in a Dutch oven or large soup pot over medium heat
- 2 tbs. butter
- 4 Italian sausages, casings removed
- 1 cup pearl onions, peeled
- 1-1/2 cups crushed tomatoes
- 3 cups chicken broth
- 2 tsp. dried oregano
- 1 small butternut squash, peeled, seeded, and cut into 1-inch chunks
- 3 carrots, peeled and sliced into 2-inch pieces
- 3 parsnips, peeled and sliced into 2-inch pieces
- 1 small fennel bulb, trimmed and halved
- 1/2 pound Brussels sprouts, trimmed and halved
- sea salt and pepper, to taste
Hot Bean Dip

Preheat oven to 350 degrees F (175 degrees C)
- 1 (8 ounce) package cream cheese, softened
- 1 cup sour cream
- 2 (16 ounce) cans refried beans
- 1/2 (1 ounce) package taco seasoning mix
- 5 drops hot pepper sauce
- 2 tablespoons dried parsley
- 1/4 cup chopped green onions
- 1 (8 ounce) package shredded Cheddar cheese
- 1 (8 ounce) package shredded Monterey Jack cheese

Preheat the oven to 375°F
- Ingredients:
- 1/2 lb ground beef
- 1 cup onion, chopped
- 1 medium Yukon gold potato, peeled and diced
- 1/2 cup carrot, diced
- 1/4 cup frozen peas
- 1/4 cup frozen corn
- 2 Tbsp Worcestershire sauce
- 1/2 cup canned chicken gravy
- 1 egg
- 1 Tbsp water
- 2 boxes (4 rolls) pre-made pie crust
- 8 slices American cheese, quartered

- 1/4 C milk
- 1 3/4 C flour
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1/2 C unsweetened cocoa powder
- MARSHMALLOW FILLING:
- 12 large marshmallows
- CHOCOLATE FROSTING:
- 1 C butter
- 4 Tb unsweetened cocoa powder
- 1/3 C milk
- 4 C powdered sugar
- dash salt
