Almond Chicken Casserole

In a large bowl, combine the first 12 ingredients
- 2 cups cubed cooked chicken
- 1 can (10 3/4 oz) condensed cream of chicken soup, undiluted
- 1 cup (8 oz) sour cream
- 3/4 cup mayonnaise
- 2 celery ribs, chopped
- 3 hard-cooked eggs, chopped
- 1 can (8 oz) water chestnuts, drained and chopped
- 1 can (4 oz) mushrooms stems and pieces, drained
- 1 Tbs finely chopped onion
- 2 tsp lemon juice
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 cup (4 oz) shredded cheddar cheese
- 1/2 cup crushed cornflakes
- 2 Tbs butter, melted
- 1/4 cup slliced almonds
Oatmeal Raisin Cookies

Heat oven to 350. Beat together margarine and sugars until creamy
- 1 cup (2 Sticks) margarine or butter, softened
- 1 cup firmly packed brown sugar
- 1/2 cup sugar
- 2 eggs
- 1 tsp vanilla
- 1 3/4 cups flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt, optional
- 3 cups oatmeal(quick or old fashioned), uncooked
- 1 cup raisins
Stromboli Wraps

Lightly spread 1 side of each wrap with butter
- 4 Mission Zesty Garlic Herb Wraps
- 1/3 cup butter, softened
- 6 Tbs shredded parmesan cheese
- 4 oz provolone cheese, thinly sliced
- 4 oz salami, thinly sliced
- 4 oz capicolla or ham, thinly sliced
- 1/2 (4 oz jar) roasted red peppers, rinsed and cut into strips
- 4 oz mozzarella cheese, shedded
- Marinara or pizza sauce
Quinoa and Vegetable Salad

Cook quinoa in chicken broth according to package directions
- 1 cup quinoa
- 2 cups chicken broth or water
- 2 Tbs fresh lemon juice
- 2 Tbs olive oil
- 2 Tbs chopped fresh basil
- 1 can (15 oz) garbanzo beans, drained and rinsed
- 1 can (15 oz) whole kernal sweet corn, drained
- 1 can (14.5 oz) diced tomatoes, drained
- 1 cup chopped red bell pepper
- 1/3-1/2 cup quartered kalamata olives
- 1/2 cup crumbles fete cheese
Rocky Mountain Casserole

Lightly brown hamburger and drain
- 1 pound hamburger
- 2 Tbs butter
- 1 each green pepper and onion, chopped small
- 1/2 cup sliced chopped mushrooms
- 1-8 oz can tomato sauce
- 8 slices american cheese
- mashed potatoes, enough for 4 servings
- paprika
Grilled Chicken Sausage & Summer Vegetable Saute

Place sausage on an oiled grill rack, set 4-5 inches over medium-low heat
- 2 packages (12 oz) roasted garlic chicken sausage, fully cooked
- 1 jar (24 oz) tomato and basil pasta sauce
- 16 oz rigatoni pasta
- 2 Tbs olive oil
- 1 cup thinly sliced onion
- 2 cloves garlic, minced
- 1 cup sliced fresh mushrooms
- 1 large yellow bell pepper, thinly sliced
- 1 medium zucchini squash, sliced on diagonal 1/4" thick
Crock Pot Stroganoff

Add all ingredients together in crock pot
- 1 1/2-2 # stew meat
- 1 package dry onion soup mix
- 1/2 cup red wine
- 1 can cream of mushroom soup
- 1 small can mushroom slices
- 1 onion, chopped
Blueberry-Walnut Tart

Preheat oven to 325. Coarsely chop walnuts in a food processor
- Crust:
- 1/2 cup walnuts, lightly toasted
- 1 cup graham cracker crumbs
- 1 large egg white
- 1 Tbs butter, melted
- 1 Tbs canola oil
- pinch of salt
- Filling:
- 8 oz reduced-fat cream cheese, softened
- 1/4 cup reduced-fat sour cream
- 1/4 cup plus 2 Tbs maple syrup, divided
- 2 cups fresh blueberries
Grant's Split Pea Soup

Pick over the peas to remove any debris
- 1 ham bone
- 12 oz dried green split peas
- 2 carrots, peeled
- 2 ribs celery
- 1/2 onion
- 1 parsnip
- 1 leek, split lengthwise
- 2 Tbs EVOO
- 1 bay leaf
- 4 sprigs fresh thyme
- 1 tsp dried tarragon
- 5 cups chicken broth
- 3 1/2 cups water-DO NOT DOUBLE
- Salt and Pepper to taste
- 2 Tbs parsley
