Chocolate Mint Cookies

In large saucepan over low heat cook butter, sugar and water until butter is melted

- 3/4 cup butter 6 Tbs
- 1 1/2 cup brown sugar 3/4 cup
- 2 Tbs water 1 Tbs
- 2 cups chocolate chips 1 cup
- 2 eggs 1
- 2 1/2 cups flour 1 1/4 cup
- 1 1/4 tsp baking soda 1/2 plus 1/8 tsp
- 1/2 tsp salt 1/4 tsp
- 2 boxes Green chocolate mint wafers, 1-2
- cut in half
Italian Sausage Bake

Cook pasta according to directions; drain
- 12 oz penne pasta
- 1 pound mild Italian sausage (bulk)
- 1 cup chopped onion
- 2 tsp olive oil
- 1 can (15 oz) Italian style tomato sauce
- 1 can (14.5 oz) Contadina recipe ready diced tomatoes with roasted garlic
- 1 can (6oz) tomato paste
- 1/2 cup water, chicken broth or wine
- 2 cups shredded mozzarella cheese

- 2 Tbs red wine vinegar
- 2 tsp dijon mustard
- finely grated zest of 1 lemon
- salt and pepper, to taste

- Salad:
- 3 # large shrimp (peeled and deveined), rinsed and patted dry
- finely grated zest and juice of 1 large lemon
- 1/4 cup evoo
- 2 tsp dried oregano
- salt and freshly ground black pepper, to taste
- 1 head radicchio (2 heads if small)
- 2 pounds ripe plum tomatoes, cut into 8 pieces each
- 8 oz fresh feta cheese, cut into 1/2 inch cubes

- 4-6 good sized pork chops, trimmed
- 1 can golden mushroom soup
- 1/2 can (use the soup can) apple juice
- 1 Tbs onion flakes
- 1 tsp thyme
- 1 Tbs soy sauce
- Dash garlic powder
Pork and Corn Stuffing Bake

Mix stuffing, soup, corn, onion, and celery
- 1 box stove top stuffing mix, turkey or chicken
- 1 can cream of chicken or celery soup
- 1 cup whole kernel corn
- 1 small onion, finely chopped
- 1/4 cup finely chopped celery
- 4 boneless prok chops, 3/4 inch thick
- 2 Tbs packed brown sugar
- 2 tsp spicy brown mulstard
Greek Salsa Chicken

- Salsa:
- 4 oz crumbled feta cheese
- 1 cup halved cherry tomatoes
- 1/4 cup pitted Kalamata olives
- 1/4 cup minced fresh parsley
- 1/4 cup fresh lemon juice
- 1/4 cup EVOO
- 1 Tbs chopped fresh oregano
- Chicken:
- 6 skinless bone-in chicken breast halves (6-7 oz each) seasoned with salt and pepper
- 2 Tbs EVOO
- 2 lemons, cut in wedges
