Grilled Tilapia with Lemon Basil Viniagrette

Great dish for company because it looks and tastes restaurant-worthy
- 3 Tbs lemon juice
- 3 Tbs minced fresh basil, divided
- 2 Tbs olive oil
- 2 garlic cloves, minced
- 2 tsp capers, drained
- 1/2 tsp grated lemon peel
- 4 tilapia fillets (6 ounces each)
- 1/2 tsp salt
- 1/4 tsp pepper
Homemade Taco Seasoning

A mix of spices that approximates what you might buy in a package
- 1 Tbs chili powder
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp crushed red pepper flakes
- 1/4 tsp dried oregano
- 1/2 tsp paprika
- 1 1/2 tsp ground cumin
- 1/2-1 tsp sea salt
- 1 tsp black pepper
Low Country Boil Packets

Preheat grill to medium-high heat
- 1 pound large shrimp
- 2 tsp seafood seasoning, such as Old Bay
- 6 small red skin potatoes, cut into 1/4 inch slices
- 2 links Andouille sausage (about 14-oz) cut into 1/4 inch slices
- 16 Littleneck clams, scrubbed
- 2 ears of corn, cut into 1-2 inch wheels
- 4 Tbs butter
- 1 lemon, sliced into 8 rounds
- 2 scallions, white and green parts, thinly sliced
- Grilled crusty bread, for serving
- Can also add 1/2 pound scallops in place of clams
No-Frying Eggplant Parmesan

Preheat oven to 350. In medium bowl, combine bread crumbs and 1/2 cup parmesan cheese
- 2 cups seasoned dry bread crumbs
- 1 1/2 cups grated parmesan cheese
- 2 medium eggplants (about 2 pounds), peeled and cut into 1/4 inch slices
- 4 eggs, beaten with 3 Tbs water
- 1 jar (1 lb. 10 oz) Ragu Chunky Gardenstyle Pasta Sauce
- 1 1/2 cups shredded mozzarella cheese (about 6 oz)

- 1 package (3.4 oz) Jello vanilla flavor instant pudding
- 1 cup plus 2 Tbs cold milk, divided
- 1 1/2 cups thawed Cool Whip whipped topping
- 1 round yellow cake layer (8 or 9 inch)
- 1 square unsweetened chocolate
- 1 Tbs butter
- 3/4 cup powdered sugar

- Start with a standard, sea-level recipe-
- At 3,000 feet: Decrease baking powder by 1/8 tsp per teaspoon measured. Decrease sugar by up to 1 Tbs per cup measured. Increase liquid by 1-2 Tbs per cup measured.
- At 5,000 feet: Decrease baking powder by 1/8 to 1/4 teaspoon per teaspoon measured. Decrease sugar by up to 2 Tbs per cup measured. Increase liquid by 2-4 Tbs per cup measured.
- At 7,000 feet: Decrease baking powder by 1/4 tsp per teaspoon measured. Decrease sugar by 1-3 Tbs per cup measured. Increas liquid by 3-4 Tbs per cup measured.
Cajun Spice Mix

This is a mildly hot Cajun spice mix you make yourself with comon spices from your pantry
- 2 tsp salt
- 2 tsp garlic powder
- 2 1/2 tsp paprika
- 1 tsp ground black pepper
- 1 tsp onion powder
- 1 tsp cayenne pepper
- 1 1/4 tsp dried oregano
- 1 1/4 tsp dried thyme
- 1/2 tsp red pepper flakes, optional
Baked Stuffed Shells

Preheat oven to 350. For sauce, in a medium saucepan cook onion and garlic in hot oil over medium heat
- 1/2 cup chopped onion (1 medium onion)
- 2 cloves garlic, minced
- 1 tsp olive oil
- 1 can (14.5 oz) diced tomaotes, undrained
- 1 can (8 oz) tomato sauce
- 1/4 tsp salt
- 1 Tbs snipped fresh basil
- 2 tsp snipped fresh oregano
- 1 package 12-15 oz ricotta
- 1/4 cup egg beaters, lightly beaten
- 1/2 cup finely shredded parmesan or romano cheese
- 1/4 tsp pepper
- 12 dried jumbo shell macaroni, cooked and drained
- 1/2 cup shredded mozzarella cheese (2 oz)

- 4 cups shredded carrots (about 4 large)
- 3/4-1 1/2 cups raisins
- 1/4 cup mayonnaise
- 2 Tbs sugar
- 2-3 Tbs milk
