Harvest Vegetable Bake

This dish is packed with a large assortment of vegetables
- 2 1/2-3 # boneless, skinless chicken thighs
- 2 bay leaves
- 4 small red potatoes, cut into 1 inch pieces
- 4 small onions, quartered
- 4 small carrots, cut into 2 inch pieces
- 2 celery ribs, cut into 2 inch pieces
- 2 small turnips, peeled and cut into 1 inch pieces
- 1 medium green pepper, cut into 1 inch pieces
- 12 small mushrooms
- 2 tsp salt
- 1 tsp dried rosemary, crushed
- 1/2 tsp pepper
- 1 can (14 1/2 oz) diced tomatoes, undrained
Spicy Shrimp Cakes with Corn-Avocado Salsa

Can prepare the shrimp cakes a day in advance
- Cakes:
- 1 # medium shrimp, peeled and deveined
- cooking spray
- 1 cup finely chopped red bell pepper
- 1 garlic clove, minced
- 1/4 cup thinly sliced green onions
- 3 Tbs reduced-fat mayonnaise
- 1 Tbs fresh lime juice
- 1 1/2 tsp hot sauce
- 1/2 tsp sugar
- 1/4 tsp salt
- 1 large egg
- 1/4 cup finely chopped fresh cilantro
- 3/4 cup panko breadcrumbs, divided
- Salsa:
- 1 cup frozen white corn, thawed
- 3/4 cup diced peeled avocado
- 1/4 cup chopped fresh cilantro
- 3 Tbs finely chopped red onion
- 2 Tbs finely chopped seeded poblano pepper
- 1 Tbs frsh lime juice
- 1/4 tsp salt
Good Scents

Combine all ingredients in small saucepan or crock pot
- 5 cinnamon sticks, broken
- 1 Tbs whole cloves
- 1 Tbs whole alspice
- Rind of 2 oranges
- 3 bay leaves
- 3 cups water
Tuna Salad

Mix all ingrediebnts together and put on bread with tomato and lettuce
- 1/3 cup mayo
- 1/4 cup light sour cream
- 12 oz (2cans) tuna
- 1/4 cup dried cranberries-chopped
- 1 Tbs fresh dill
- 1/2 tsp black pepper
- 1/4 tsp lemon zest
- 1 tsp lemon juice
Bacon-Swiss Pork Chops

Quick and easy but impressive enough to serve to company
- 2 bacon strips, chopped
- 1 medium onion, chopped
- 4 boneless pork loin chips (4 ounces each)
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 2 slices Swiss cheese or cheese of your choice, halved
Spicy Rice

Heat oven to 350 degrees. Mix together all ingredients and place in 9 x 13 pan
- 1 1/2 cups long grain and wild rice
- 1/2 cup oil
- 1/2 cup water
- salt and pepper to taste
- 1 can (4 oz) mushrooms, sliced
- 1/2 cup onion,chopped
- 1 quart bloody mary mix (spicy) or spicy V-8 juice

- 1 package (16 oz) milk chocolate M&M's
- 1 package (10 oz) peanut butter chips
- 1 can (3-5 oz) chow mein noodles
- 1 1/2 cup raisins
- 1 1/4 cup peanut
Sunrise Breakfast Casserole

Mix eggs, milk and seasonings
- 8 oz. sausage-cooked
- 9 eggs
- 3 cups milk
- 1 1/2 tsp ground mustard
- 1 tsp salt
- 1/2 tsp pepper
- 1-28 oz package frozen hash browns with peppers and onions
- 8 oz shredded cheddar cheese
- 1/3 cup sliced green onions
- 2 cups salsa
Cherry Cheese Blintzes

These elegant blintzes can be served as an attractive dessert or a brunch entree
- Filling:
- 2/3 cup all-purpose flour
- 1/2 tsp salt
- 3 eggs
- 1 1/2 cups milk
- 2 Tbs butter, melted
- 1 cup (8 oz) small-curd cottage cheese
- 1 package (3oz) cream cheese, softened
- 1/4 cup sugar
- 1/2 tsp vanilla
- Cherry Sauce:
- 1 pound fresh or frozen pitted sweet cherries
- 2/3 cup plus 1 Tbs water, divided
- 1/4 cup sugar
- 1 Tbs cornstarch
Quinoa Pilaf with Pine Nuts

Put the broth and quinoa in a medium sized saucepan and bring to a boil
- 2 cups chicken broth
- 1 cup quinoa, rinsed
- 1/4 cup pine nuts
- 1 Tbs olive oil
- 1/2 large onion, chopped
- 1/3 cup chopped fresh parsley leaves
- Salt and pepper
