Baked Broccoli and Chicken Casserole

Heat oven to 375. Butter a shallow 2-quart or 9x13 baking dish
- Butter for dish
- 2 large eggs, beaten
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1 10-oz can condensed cream of mushroom soup
- Black pepper
- 1/4 sweet onion, coarsely chopped
- 8 oz sharp cheddar cheese, grated
- 3 cups shredded cooked chicken
- 2 cups leftover cooked rice
- 1 16-oz pkg frozen chopped broccoli, thawed, drained and squeezed of excess water
- 1/2 cup potato chips, crushed
Baby Back Ribs-Laurie

Par boil ribs for 1/2 hour and drain
- Sauce: (double or triple)
- 1/4 cup sugar
- 1 cup catsup
- 1 tsp chili powder
- 1 cup water
- chopped onions
- 5 pounds baby back ribs cut into 2-3 rib sections
Lemonade

- 3 lemons
- 1 orange
- 3/4 cup sugar (splenda)
- 2 quarts water
Broccoli Cole Slaw Salad

In a large bowl, combine broccoli cole slaw, pineapple, almonds, apples, grapes and raisins
- 1 bag broccoli cole slaw
- 2 cups pineapple chunks
- 1/2 cup almonds, sliced
- 2 cups apples, diced
- 1 cup fat free cole slaw dressing
- 1/2 cup raisins
- 1 cup grapes
Galliano Barbecue Sauce

Delicious!! Brush it on anything-Beef, Poultry, or anything that moves
- 2 cups catsup
- 1 cup chili sauce
- 1/2 cup Galliano
- 2 Tbs worchestershire sauce
- 1/2 cup brown sugar
- 1/4 cup fresh lemon juice
Spinach-Stuffed Turkey Loaf

Combine meat mixture ingredients in large bowl
- Meat Mixture:
- 1 1/2 # ground turkey
- 1/2 cup Italian bread crumbs
- 1/2 cup milk or tomato juice
- 2 Tbs instant minced
- 1/2 tsp each garlic salt and black pepper
- 1 egg
- Filling:
- 1 10 oz pkg frozen chopped spinach, thawed and drained
- 1 cup shredded cheddar cheese
- 2 Tbs parmesan cheese
- Topping:
- 1/2 cup ketchup
- 1 Tbs brown sugar
- 1 tsp prepared mustard
Chunky Salsa

Vinegar adds delightful tang to this sweet tomato salsa
- 6 pounds tomatoes
- 3 large green peppers, chopped
- 3 large onions, chopped
- 2 cups white vinegar
- 1 large sweet red pepper, chopped
- 1 12-oz can tomato paste
- 4 jalapeno peppers, seeded and chopped
- 2 Serrano peppers, seeded and chopped
- 1/4-1/2 cup sugar
- 1/2 cup minced fresh cilantro
- 1/2 cup bottled lemon juice
- 3 garlic cloves, minced
- 4 tsp ground cumin
- 3 tsp salt
- 2 tsp dried oregano
- 1-2 tsp hot pepper sauce
Crash Hot Potatoes

- 12 small yellow potatoes
- kosher salt
- 3 Tbs olive oil
- fresh ground black pepper
Artichoke Dip

Mix first 4 ingredients together and put in baking dish
- 1 large can artichoke hearts-drained and chopped
- 1 4-7 oz can green chilies
- 1/4 cup parmesan cheese
- 1/4 cup mayonnaise
- 1 can fried onions
Artichoke Salad

Mix together first 6 ingredients and pour over artichoke hearts
- 1/2 cup salad oil
- 1/3 cup tarragon vinegar
- 1 Tbs sugar
- 1 tsp thyme
- 1/2 tsp dry mustard
- 1 clove garlic, minced
- 7 oz can artichoke hearts, drained and quartered
- red or green pepper, chopped
- 1/2 cup chopped summer sausage
- 1/4 cup black olives
- 3 cups each romaine and iceburg lettuce
- 2 Tbs parmesan cheese
- tomatoes
