Seafood Pasta

Really great! Good Christmas day dinner
- Sauce:
- 1 # linguine
- 4 cloves garlic, minced
- 2 Tbs butter
- 2 Tbs olive oil
- 1/2 cup dry white wine
- 3 cans (14 1/2 oz each) diced tomatoes
- Salt and pepper to taste
- Red pepper flakes to taste
- Seafood:
- 1 Tbs butter
- 1 Tbs olive oil
- 1 # jumbo or large shrimp, peeled and deveined, rinsed and dried
- 1 # scallops, rinsed and dried
- To serve:
- Warm cream
- Fresh basil leaves, torn
- Fresh parsley leaves, torn
Vanilla Sugar

- 2 cups sugar

Cream first 4 ingredients well
- Butter Icing:
- 2 eggs, beaten
- 1 cup sugar
- 4 Tbs milk
- 1 tsp vanilla
- 1 cup butter NOT MARGARINE
- 3 cups flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp nutmeg
- 1/2 cup butter
- 1 pound powdered sugar
- 1 tsp vanilla
- 1 Tbs milk
- 1 egg
- food coloring as desired
Sour Cream Enchiladas

Cook tortillas 15 seconds on each side
- 1 dozen corn tortillas
- 1/2 cup oil
- 1 # ground beef or turkey
- 1 onion chopped
- 1 package enchilada seasoning mix
- 1/2 cup water
- 2 cups shredded Monteray Jack cheese
- 1 tsp hot sauce
- shredded lettuce
- 1/4 cup butter
- 1 medium green pepper, chopped
- 1/4 cup flour
- 2 cups chicken broth
- 1 cup sour cream
Shrimp Tacos

Great summer time dinner
- 1/2 cup sour cream
- 3 Tbs mayonnaise
- 3 Tbs milk
- 1/2 tsp ground cumin
- 3 Tbs unsalted butter, melted
- 2 cloves garlic, finely chopped
- 1 1/2 pounds large shrimp, peeled and deveined
- 4 limes, quartered
- 1/2 tsp kosher salt
- 8 6" corn tortillas
- 3 cups shredded green cabbage
- 1 14-16 oz jar green (tomatillo)salsa
- Wooden skewers, soaked in water for 30 minutes
Cedar Plank Salmon

Great dish from Savory Spice Shop
- 1 pound salmon (skin on)
- 1 Tbs olive oil
- 1 Tbs Pearl Street Plank Rub
- Cedar plank
- Note: If using 2 pounds, just double the recipe. Basically, use 1 Tbs ingredients per pound of fish.
Beef and Tater Bake

The entire family will enjoy this all-in-one dinner, plus a quick cleanup
- 4 cups frozen tater tots
- 1 pound ground turkey or beef
- 1 package (16 ounces) frozen chopped broccoli, thawed
- 1 package (10 3/4 ounces) condensed cream of broccoli soup, undiluted
- 1 medium tomato, chopped
- 1 can (2.8 ounces) french fried onions, divided
- 1 cup (4 ounces) shredded colby-monterey jack cheese, divided
- 1/3 cup milk
- 1/4 tsp garlic powder
- 1/8 tsp pepper

Preheat oven to 375. In a small bowl, combine the flour, baking soda and salt
- 2 1/4 cups flour
- 1 tsp baking soda
- 1 tsp salt
- 1 cup (2 Sticks) unsalted butter, softened
- 3/4 cup sugar
- 3/4 cup packed light brown sugar
- 1 tsp vanilla
- 2 eggs
- 2 cups (12 oz) semi-sweet chocolate chips
- 1/2 cup chopped walnuts or pecans
- 1/2 cup golden raisins
- 1/2 cup shredded coconut

Tastes like a cool and creamy version of lemon merinque pie, only better
- 2 cups all-purpose flour
- 1 cup butter, softened and cut into cubes
- 1/2 cup crushed walnuts
- 2 (8 oz) packages cream cheese
- 1 cup sugar
- 2 Tbs lemon juice
- 2 (3.4 oz) packages instant lemon pudding mix
- 3 1/2 cups milk
- 1 (12 oz) container frozen whipped topping, thawed
