- 1 small fennel bulb, finely chopped
- 1 small onion, finely chopped

- 3/4 pound sweet potato (1 large), scrubbed and cut into 1 1/2-inch pieces

- 3/4 cup dried cherries, soaked in warm water for 10 minutes and drained
