- 30 g Cumin seeds

Shrimp and Corn Chowder with Fennel

Heat the butter in a large saucepan over medium heat
- 2 tablespoons unsalted butter
- 2 leeks (white and light green parts), chopped
- 1 fennel bulb, chopped
- kosher salt and black pepper
- 2 tablespoons all-purpose flour
- 1 8-ounce bottle clam juice
- 3 cups whole milk
- 1 pound potatoes, peeled and cut into 1/2-inch pieces
- 3/4 pound cooked peeled and deveined medium shrimp
- 1 10-ounce package frozen corn
- 2 tablespoons chopped fresh flat-leaf parsley
- 2 tablespoons fresh lemon juice

Black Bean Soup with Roasted Jalepeno Salsa

Heat 2 tablespoons of the oil in a large pot over medium heat
- 2 tablespoons plus 2 teaspoons olive oil
- 1 large poblano or green bell pepper, chopped
- 2 cloves garlic, chopped
- 1 large red onion, chopped
- kosher salt and black pepper
- 1 teaspoon ground cumin
- 2 15.5-ounce cans black beans, rinsed, or 1 heaping cup dried black beans, soaked and cooked
- 1 12-ounce bottle lager beer
- 3 to 4 jalapenos, halved and seeded
- 1/2 cup fresh cilantro leaves
- 2 tablespoons fresh lime juice

Preparation 1. Place beans in a Dutch oven; add water 2 inches above beans
- 1 1 1 pound dried red kidney beans
- 1/2 1/2 1/2 pound andouille smoked chicken sausage, thinly sliced
- 3 3 3 celery ribs, chopped
- 1 1 1 green bell pepper, chopped
- 1 1 1 medium onion, chopped
- 3 3 3 garlic cloves, minced
- 1 1 1 tablespoon Creole seasoning
- 3 3 3 cups uncooked long-grain rice
- Garnish: sliced green onions
- Note: We tested with Aidells Organic Fully Cooked Cajun Style Andouille Smoked Chicken Sausage.
- Try These Twists!
- 1 2. 7 7 4-qt. 7 10 1 and 2. Stir together first 7 ingredients and 7 cups water in a 4-qt. slow cooker. Cover and cook on HIGH 7 hours or until beans are tender. Serve with rice. Makes: about 10 cups.
