  • 2 tablespoons pure maple syrup
  • 2 medium sweet potatoes (about 1 pound), peeled
  • 2 large shallots, chopped
  • 1 5-ounce package baby spinach, chopped

Preheat oven the oven to 375 degrees ( I think I used 350)

  • 1 cup fresh blueberries
  • 4 cups fresh peaches (peeled and sliced)
  • 3/4 cup sugar (sweeten the mixture to your taste)
  • 1 1/2 tablespoons all-purpose flour
  • Large pinch (about 1/2 tablespoon) freshly grated
  • lemon zest---(mine came out of a jar!)
  • 2 teaspoons fresh lemon juice---(I used Meyers brand

  • 3/4 cup brown sugar
