Pork Tenderloin - Chili Glazed with Sweet Potato Hash

Heat broiler. Place the pork on a foil-lined rimmed baking sheet
- 1 pork tenderloin (about 1 1⁄4 pounds)
- 1 tablespoon plus 1 teaspoon olive oil
- 1 teaspoon chili powder
- kosher salt and black pepper
- 2 tablespoons pure maple syrup
- 2 medium sweet potatoes (about 1 pound), peeled
- 2 large shallots, chopped
- 1 5-ounce package baby spinach, chopped
- hot sauce (optional)
Mom's Fruit Pie

Preheat oven the oven to 375 degrees ( I think I used 350)
- 1 cup fresh blueberries
- 4 cups fresh peaches (peeled and sliced)
- 3/4 cup sugar (sweeten the mixture to your taste)
- 1 1/2 tablespoons all-purpose flour
- Large pinch (about 1/2 tablespoon) freshly grated
- lemon zest---(mine came out of a jar!)
- 2 teaspoons fresh lemon juice---(I used Meyers brand
- from the fridge)

- 1 tablespoon butter, cut in bits
- 3/4 cup brown sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon ground nutmeg
String Beans with ginger and Garlic

1. Bring a large pot of salted water to a boil, and fill a large bowl with ice water
- Salt
- 21/2 pounds string beans (French-style slim haricots verts work especially well), trimmed
- 4 tablespoons vegetable oil
- 1/4 cup minced fresh ginger (about 6 inches ginger root, peeled)
- 4 medium-size garlic cloves, minced
Black Bean Soup

1. Heat large saucepan over medium heat until hot
- 1 tablespoon vegetable oil
- 1 cup chopped onions
- 1 tablespoon minced garlic
- 1 (15-oz.) can black beans, undrained
- 1/2 lb. chorizo sausage links, cut into 1/2-inch pieces
- 1 teaspoon ground cumin
- 1 cup orange juice
- 1/2 cup water

Mix everything except onions together in a pot and boil
- 1 1/4 cups red wine vinegar
- 6 tablespoons sugar
- 1/2 teaspoon fennel seeds (optional)
- 1 bay leaf
- pinch red pepper flakes

Apple-Ginger Cake

1. Heat oven to 350°F. Spray 13x9-inch baking pan with cooking spray
- CAKE
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3 eggs
- 2 cups sugar
- 1 cup canola oil
- 2 teaspoons vanilla extract
- 1 cup sour cream
- 1 1/2 cups grated peeled apples, such as Golden Delicous, Cortland and/or Braeburn (2 to 3 apples)

- FROSTING
- 6 oz. cream cheese, softened
- 6 tablespoons unsalted butter, softened

Quinoa Corn Johnny Cakes from Crofton on Wells (Chicago)

Johnny Cakes Method: Cook the quinoa with the water until dry
- Ingredients:
- 1 cup quinoa-rinsed well in cold water-drained
- 2 cups water
- 1 ear of corn-kernels removed
- 1 cup red onion-caramelized and pureed with 1/8 cup balsamic vinegar
- 3 eggs
- 1 tsp baking powder
- 1 tsp sea salt
- 1/2 tsp ground white pepper
- 1/3 cup flour
- 2 tbsp fresh lime juice
- 1/8 cup chopped cilantro
- 1/4 cup chanterelles, well brushed and trimmed(to be used in the plating of the dish, not in the batter)
- Corn Emulsion
- 1 ear of corn-kernels removed
- 1 cup heavy cream
- 1/2 cup skim milk
Hashed Brussels Sprouts with Lemon Zest

Place lemon juice in a large bowl
- 2 tablespoons freshly squeezed lemon juice, plus grated zest of 1 lemon
- 2 pounds brussels sprouts
- 2 tablespoons olive oil
- 2 tablespoons butter
- 3 garlic cloves, minced
- 2 tablespoons black mustard seeds or poppy seeds
- 1/4 cup dry white wine or vermouth
- Salt and pepper to taste
Butternut Squash Soup

- 6 C butternut squash (about 2 squash)
- Melted Butter
- 1 T Kosher salt, plus 1 t
- 1 t white pepper, plus ½
- 3 C Chicken stock
- 4 T honey
- 1 t minced ginger
- 4 oz heavy cream
- ¼ t nutmeg
