Black Bean & Pineapple Salsa

Mix all ingredients Season to taste with coarse salt & serve
- 1 15.5 ounce can of black beans, rinsed & drained
- 1 1/2 cups chopped pineapple
- 1 jalepeno stemmed, seeded & minced
- 3 tbsp finely chopped red onion
- 1/4 cup chopped fresh cilantro
- 1 tablespoon fresh lime juice.
Moroccan Mint Tea

1. Whisk the first 3 ingredients in a bowl
- 1 1/4 Cup All Purpose Flour
- 2 Tsp Baking Powder
- 1/2 Tsp Salt
- 1/4 Cup Nutella

- 1 Tbsp Sugar
- 1 1/4 Cup Milk
- Oil
- Raspberry Sauce
- 1 Bag Frozen Raspberries (about 12 oz)
- 2 Tbsp Sugar (you could also use honey or agave)
- 1/4 Cup Water
- 1 Tbsp Cornstarch

Peas - Rich and Creamy with Pancetta

Bring a large pot of salted water to a boil over high heat
- Kosher salt
- 2 cups shelled fresh English peas or thawed frozen peas (about 10 ounces)
- 1 pound sugar snap peas, trimmed
- 1/4 pound snow peas, trimmed and thinly sliced
- 4 ounces pancetta, chopped
- 2 tablespoons all-purpose flour
- 1 1/2 cups low-sodium chicken broth
- 1/2 cup heavy cream
- Juice of 1 lemon
- Freshly ground pepper
Mushroom Lasagna with Creamy Bechamel

Preparation To prepare filling, combine water and porcini in a small bowl; let stand 30 minutes
- Mushroom filling:
- 2 cups boiling water
- 1 cup dried porcini mushrooms (about 1 ounce)
- 1 tablespoon olive oil
- 2 cups chopped onion
- 4 garlic cloves, minced
- 8 cups sliced shiitake mushroom caps (about 1 1/2 pounds)
- 3 cups sliced cremini mushrooms (about 1/2 pound)
- 1/2 teaspoon salt
- 1/2 cup Côtes du Rhône or other fruity red wine
- 1 tablespoon low-sodium soy sauce
- 1/4 cup chopped fresh parsley
- 2 teaspoons chopped fresh or 3/4 teaspoon dried rosemary
- 1/4 teaspoon freshly ground black pepper
- Béchamel:
- 3 cups 1% low-fat milk
- 2 tablespoons butter
- 3 tablespoons sifted all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/8 teaspoon ground nutmeg
- Remaining ingredients:
- Cooking spray
- 1 (8-ounce) package precooked lasagna noodles
- 1 cup (4 ounces) grated fresh Parmesan cheese

- 1 Tbs. baking powder
- 1/2 tsp. salt
- 1 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 1/2 cup raisins
- 1/2 cup chopped walnuts
- ICING
- 1 1/2 cups confectioners' sugar
- 1 Tbs. vegan margarine
- 1/2 tsp. vanilla extract
Creamy Pesto Shrimp

- 1 lb linguine pasta
- 1/2 butter
- 2 cups panna or heavy cream
- 1/2 tsp ground black pepper
- 1 cup grated parmesan cheese
- 1/3 cup basil pesto
- 1 lb shrimp, peeled & deveined
Garlic, Basil, Almond (Umami) Paste

- ½ oz. fresh basil leaves
- Pinch of salt flakes
- ½ garlic clove
- 1 oz. whole blanched almonds, toasted
- ½ tsp. fennel seeds
- ½ lemon, zested and juiced
- 1 ½ tbsp. extra-virgin olive oil
