- 1 C reduced sodium chicken broth
- 1 tsp cornstarch
- 4 T evaporated skim milk
- 2 T dijon mustard

- 1 1/2 oz dried porcini mushrooms
- 1 C boiling water
- 3 - 14 1/2 oz cans low salt chicken broth
- 2 T olive oil
- 1 Large onion, chopped
- 1 garlic clove, chopped
- 6 oz button mushrooms, chopped
- 2 T chopped fresh rosemary or 2 tsp dried
- 1 3/4 C arborio* or medium grain white rice
- 3/4 C dry white wine
- 1/2 C freshly grated Parmesan cheese
- 6 oz Italian Fontina cheese, cut into 1/3 inch cubes
- Chopped fresh Italian parsley
- Additional grated parmesan cheese
Fettuccine w Morels and Asparagus

Cook asparagus in large pot of boiling salted water until crisp-tender, about 3 min
- 1 3/4 lbs fresh asparagus trimmed and cut into 1 inch lengths
- 8 oz fettuccine
- 3 T butter
- 2 large garlic cloves, minced
- 1 tsp dried tarragon
- 12 oz fresh morels, trimmed cut into 1/4" slices
- 1 1/4 C whipping cream
- 1/2 C canned chicken broth
- 1 C freshly grated Parmesan cheese

- 1/4 butter melted
- 1 T lemon juice
- 1 broiler-fryer chicken cut up
- 1 pkg spaghetti sauce
- 2/3 C fine dry bread crumbs
- 1/2 to 1 C half and half
- 1 C shredded mozzarella cheese

- 3/4 C botled Italian dressing
- 2 T lime juice
- 1 T chopped fresh cilantro
- 1 tsp chili powder
- 1/2 tsp grated lime peel
- 1 beef flank steak
- 1 1/2 tsp ground cumin
- 6 large flour tortillas, heated

- 6 to 8 walleye fillets
- 1 C grated Parmesan cheese
- 1/2 C butter
- 6 T mayonaise
- 6 green onions, finely chopped
- 1/2 tsp Worcestershire sauce

- Crust:
- 2 1/2 C finely ground pecan shortbread cookies
- 1/4 C unsalted butter,melted
- Caramel Sauce
- 2 C sugar
- 1/2 C water
- 1 1/4 C whipping cream
- 3/4 tsp vanilla extract
- 2 quarts (or 4 pints) peach ice cream, slightly soft
- 1 C pecans, toasted, coarsely chopped

- 3/4 C finely chopped celery
- 1/2 C plus 3 T mayonnaise
- 1/4 C finely chopped red onion
- 2 T chopped fresh tarragon
- 1 tsp grated lemon peel
- 2 T fresh lemon juice
- 12 slices rye bread with seeds
- 2 C thinly sliced romaine lettuce

- 6 T apple cider vinergar
- 2 T brown mustard
- 2 garlic cloves
- 4 tsp anchovy paste
- 3/4 pound green beans
- 2 pounds medium size red-skinned potatoes (about 6)
- 1 C thinly sliced green onions
- 8 bacon strips cooked, crumbled
- 1/2 C grated Parmesan cheese

- 1 C boiling water
- 1 oz dried morels, rinsed and drained
- 2 chicken breast halves with skin
- 1 T vegetable oil
- 3/4 C chopped onion
- 2 Large garlic cloves, minced
- 1 T minced fresh thyme or 1 tsp dried
- 1 1/2 C canned low salt chicken broth
- 1/4 C plus 1 T dry Madeira
- 1 T cornstarch
