SLOW COOKER BAKED ZITI

1. In a large skillet, cook ground beef and onion until browned
- 1# ground beef
- 1 onion finely chopped
- 1 t minced garlic
- 1 t salt
- 1 t dried basil
- 1 t dried parsley
- 28 oz can diced tomatoes
- 650 ml jar pasta sauce - about 2 1/2 c
- 2 1/2 c water or chicken broth
- 375 g box Penne or Ziti or other short pasta ( about 4 c)
- 1 c shredded mozzarella cheese
CHILE RELLENO CASSEROLE

Preheat oven to 325 degrees and grease a 9x12 baking dish
- 8-9 eggs
- 1/2 c milk
- 2 T flour
- salt and pepper
- 1 large can whole green chiles, drained and split
- 16 oz jack cheese, sliced
- 3 c jack cheese, shredded
CREAMY THAI CARROT SOUP

- 2 c reduced-sodium chicken broth, or vegetable broth
- 1 pound uncooked baby carrots
- 1/2 c uncooked onion, chopped
- 1 clove garlic, cloves peeled
- 2 t ginger root, freshly grated
- 1 1/2 t Thai curry paste, red-variety, or curry powder
- 1/2 t table salt
- 6 oz low-fat tofu, silken-variety
- 2 T mint leaves, cut into slivers
RED CURRY-LIME SKIRT STEAK

1. Combine red curry paste, lime juice, olive oil and garlic in a small bowl
- 4 t red curry paste
- 4 t fresh lime juice
- 4 t olive oil
- 4 cloves garlic; peeled and finely minced
- 1 pound skirt steak, cut into four equal portions
BUCKEYES

Mix together the peanut butter, vanilla extract, salt, and butter
- 1 1/2 c natural, smooth peanut butter
- 1 t vanilla extract
- 1/3 t salt
- 1/2 c butter, melted
- 2 -3 c confectioners' sugar
- One 12-ounce bag semi-sweet chocolate chips
MEXICAN CASSEROLE

- 1 pound lean ground beef, drained and rinsed
- 1/2 c onions, chopped
- 1/4 c canned jalapeno slices, chopped
- 2 c fresh tomatoes, chopped or 1 15-ounce can diced tomatoes
- 1 15-ounce can kernel corn, drained
- 1 15-ounce can black beans, rinsed and drained
- 1 1 1/4-ounce package taco seasoning mix
- 8 corn tortillas
- 3/4 c nonfat sour cream
- 1/3 c reduced-fat Mexican cheese blend, shredded
- 1/3 bunch fresh cilantro, chopped
FRUIT PIZZA

Use pizza pan and preheat oven to 350 degrees
- Glaze:
- 1 roll Pillsbury slice and bake sugar cookies
- 8 oz. cream cheese
- 1 tsp. vanilla
- 1/2 cup sugar
- any fruit you want to put on it- sliced up
- 1 cup sugar
- 3 T cornstarch
- dash of salt
- 3/4 cup water
- 1 cup orange juice
- 1/4 cup lemon juice
AUNT IRIS' FUDGE

In a heavy saucepan, combine the sugar, evaporated milk and butter
- 4 1/2 c sugar
- 1 can (12oz) evaporated milk
- 1/4 c butter
- 16 large marshmallows, cut up
- 2 bars (4oz each) German sweet chocolate, chopped
- 2 c milk chocolate chips
- 1 c chopped walnuts
- 3 t vanilla extract
CAULIFOWER GRATIN

Preheat oven to 400 degrees
- 1 large head cauliflower, cored and cut into florets
- 1 c heavy cream
- 1 T flour
- 1 c grated Parmesan
- Coarse salt and ground pepper
- 1/2 c fresh breadcrumbs
- 1 T unsalted butter, cut into small pieces
FRUIT AND HONEY BARS

POINTS: 3
- 1/3 c honey
- 2 large eggs
- 1/2 t salt
- 1 c old-fashioned rolled oats
- 1/2 c instant nonfat dry milk
- 1/4 c wheat flour
- 1/2 c shelled unsalted pumpkin seeds; unsweetened shredded coconut, ground flaxseed; dried apricots, chopped; and dried cherries
- (Add 2T wheat germ in Step 2; sprinkle with 1/2 c mini-chocolate chips for 1 extra point.)
- (Substitute cherries with 1/2 c dried cranberries in Step 2. For icing mix until smooth 1/4 c sifted powdered sugar. pinch of cloves, and 3-4 t milk; drizzle over cooled bars for an extra 1 point.))
