Easy Chicken and Rice Casserole

Preheat oven to 350F. Rinse chicken and pat dry; Chop and arrange chicken pieces on bottom of 13x9 baking dish
- 4 skinless, boneless chicken breast halves
- 1 cup uncooked white rice
- Frozen veggies, optional
- 1 can cream of chicken soup (Cream of Broccoli or Cheddar Cheese!)
- 1 7/8 cups water
- 1 (1oz) package dry onion soup mix
Smoky Cheese Spread

- 2 (8oz) packages cream cheese, softened
- 2 cups shredded cheddar cheese
- 1 dash liquid smoke flavoring
- 4 or 5 pieces cooked bacon, crumbled
Peach Pancakes

1. Drain peaches; reserve 1 cup juice
- 2 (15oz) can peach slices
- 1/2 cup whipping cream
- 2 eggs, lightly beaten
- 1 1/2 cups oat flour or whole wheat flour
- 1 cup all-purpose flour
- 1/3 cup packed dark brown sugar
- 2 ts- baking powder
- 1 1/4 tsp ground ginger
- 1 1/4 tsp cinnamon
Whole Wheat Honey Bread

1. Measure all ingredients to the pan of a bread machine according to manufacturers directions
- 3 1/2 cups all-purpose flour
- 3 cups whole wheat flour
- 2 1/2 cups lukewarm water
- 1/3 cup shortening (butter flavored)
- 1/3 cup instant nonfat dry milk
- 2 pkg active dry yeast (2 tbsp=2 pkg)
- 1/4 cup honey
- 1 tbsp salt
Apple Custard Pie with Oatmeal Crust

1. Crust: In a food processor combine all ingredients EXCEPT butter and give a few good chops until oats are ground
- Crust:
- 1 cup oats
- 1/2 cup flour
- 1/4 brown sugar, packed
- 1/4 tsp cinnamon
- 4 tbsp butter, softened
- Filling:
- 2 eggs
- 1/4 cup sugar
- 1/2 tsp vanilla
- 3/4 cup milk
- 3-4 apples, peeled & cut into slices
- Topping:
- 1/2 cup corn flakes, coarsely crushed
- 1/4 cup sugar
- 1 tsp apple pie spice
- 1/4 cup cold butter, cut in pieces
Amish Breakfast Casserole

1. In a large skillet, cook bacon and onion until bacon is crisp; drain
- 1 lb sliced bacon, diced
- 1 medium sweet onion, chopped
- 6 eggs, lightly beaten
- 4 cups frozen shredded has brown potatoes, thawed
- 2 cups shredded cheddar cheese
- 1 1/2 cups small curd cottage cheese
- 1 1/4 cups shredded swiss cheese

- 3 tbsp butter, melted
- 1 1/4 cups graham cracker crumbs
- 1 tbsp sugar
- 5 (8oz) packages cream cheese
- 5 eggs
- 1 1/4 cup sugar
- 1 tbsp vanilla extract
- 2 (2.16 ounce) bars chocolate-coated caramel-peanut nougat candy, chopped
Creamy Corn Dip

1. Preheat oven to 400F. Cut corn kernels off the cob into a bowl using a sharp knife
- 4 ears fresh corn
- 1 red bell pepper, finely chopped
- 1 shallot or small onion, finely chopped
- 3 garlic cloves, chopped
- 2 tbsp butter
- 8 oz. cream cheese, softened
- 4 to 6 slices pancetta or bacon, cooked and crumbled
- 1/4 cup mayonnaise
- 2-3 jalapeno peppers, seeded and chopped
- Salt and pepper to taste
- 4 oz sharp cheddar cheese, shredded
Fried Mozzarella Sticks

- 2 tbsp milk
- 1 tsp milk
- 1/4 cup all-purpose flour
