- 1/4 cup each dried morels, Italian porcini and French cèpes
- 5 Tbsp. olive oil
- 1/4 cup all-purpose flour
- 2 lbs. bone-in chicken thighs, skin removed
- 1 large yellow onion, finely diced
- 8 large whole garlic cloves, peeled
- 2 Tbsp. Major Chicken Stock Base, or 2 cubes chicken bouillon, undiluted
- 1 bay leaf
- 3 fresh thyme sprigs
- Freshly ground pepper
- 1-1/2 cups sliced button mushrooms
- 1 cup dry white wine
- 1/2 cup heavy cream
- 1/4 cup finely chopped fresh parsley
Pork Steak

Preheat oven to 350 degrees
- 2 tablespoons canola oil
- 4 pork steaks
- salt and pepper
- garlic powder
- 1 large onion, chopped
- 1 cup fresh mushrooms, sliced or
- 2 (4 1/2 ounce) cans sliced mushrooms
- 2 (10 3/4 ounce) cans cream of mushroom soup
- 1 3/4 cups water
- 1 (1 ounce) package dry onion soup mix
- 1 tablespoon worcestershire sauce
Chicken Mole

Place all chicken but breasts in a 5 quart pot
- 2 frying chickens (3 lbs. each) cut in pieces
- 1 large onion, sliced
- 3 whole cloves garlic
- 1 - 14 oz. can chicken broth
- 4 - 6 cups hott cooked rice
- Mole Sauce
- 2 tbsp. chili powder
- 20 whole blanced almonds
- 1/4 cup diced green tipped banana
- 1 tsp each ground cinnamon and salt
- 2 corn tortilla, torn in pieces
- 2 tbsp. sesame seeds
- 1 tbsp. pine nuts
- chicken broth
- 6 tbsp. butter
- 1 oz. semisweet chocolate

- 0 oz mushrooms: any variety
- 1 cup peas (frozen is fine)
- 4 tbsp. dried fenugreek leaves (kasoori methi)
- 2 tsp. garlic- minced
- 2 tsp. ginger- minced
- 1 tbsp. butter or ghee (may substitute oil)
- 1 tbsp. oil
- 1 large onion- ground to a paste in the food processor
- 1 c. milk, half & half, almond milk or soymilk (I used almond milk for this recipe)
- red chili powder- to taste
- salt- to taste
- 1/2 tsp. garam masala
- a small pinch of amchoor (dried mango) powder- optional, but it adds a nice “sourness” to the curry
- a small pinch of ground nutmeg
- fresh coriander leaves (cilantro) for garnish
- Masala Paste
- 3 green cardamoms (only the seeds)
- 4 whole cloves
- 1 ″ piece of cinnamon stick
- 5 black peppercorns
- 2 tbsp. cashew nuts
- Grind together all ingredients for masala powder until they are completely powdered. A coffee grinder works wonderful for this.

- 1 cup atta/wheat flour
- 1 cup maida/white flour
- 1 tsp ajwain/carom seeds
- 1 tsp crushed black pepper (optional)
- 1 tsp cumin seeds/jeera (optional)
- 1/4 tsp baking soda
- 2 to 3 tbsp oil or ghee (i used sunflower oil)
- 1/2 to 3/4 cup water
- salt to taste
- oil for frying

- 5 green onions (chopped)
- 1 cup parsley (finely chopped)
- 5 cloves garlic (diced)
- 2 tsps fresh ginger (finely diced)
- 1/4 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp ground pepper
- 1/2 tsp red pepper flakes (or more to taste)
- 11/2 lbs ground turkey (lean)
- 2 tbsps toasted sesame seeds
- 11/2 tbsps soy sauce
- 1 eggs
- 1/2 tbsp sesame oil
- 1 tbsp canola oil

Pour the lime juice and soy sauce in a small jar
- 3 1/2 tbsp. lime juice
- 2 tbsp. low sodium soy sauce
- 1/2 tsp chili paste*
- 1/2 tsp. minced garlic
- 4-5 cups shredded cabbage, white, purple or a combination of both (or one bag of pre-shredded cabbage)
