Fry tortillas in oil. Pour 1/3 of the green chile salsa in the bottom of a 9 x 13 pan
- 12 corn tortillas
- 1 - 7 oz green chile salsa
- 2 cups (8 oz) cheddar cheese, shredded
- CHEESE FILLING
- 3 cups cottage cheese
- 1 cup cheddar cheese, shredded
- 1 1/2 cups green onions, finely chopped
- 1/4 tsp. oregano leaves, crumbled.
- Garnishes;
- 1 cup finely shredded lettuce
- 2 medium tomatoes, thinly sliced
- 1/4 cup green onions, thinly sliced
Roasted Brussel Sprouts with Balsamic Dressing

- 1 tsp. onion powder
- 1/2 tsp. ground black pepper

Old Milwaukee Rye Bread

SPONGE: Dissolve yeast in water
- SPONGE
- 1 tablespoon yeast
- 1 1/2 cups warm water
- 2 cups rye flour
- BREAD
- sponge mixture
- 1 package yeast
- 1 cup water
- 1/4 cup molasses

- 1 tablespoon salt

Pad Thai Salad

Start by turning your carrots and cucumber into noodles/ribbons
- Dressing:
- 1 Cucumber
- 2 Large carrots
- 2 Spring onions
- 1 Handful of fresh coriander
- 1 Handful of peanuts (roughly chopped/smashed)
- A couple of handfuls of shredded chicken/beef/duck/prawn/tofu/boiled eggs/whatever you fancy!
- Juice of 1 lime
- 3 tbsp Sesame oil
- 3 tbsp Soy sauce
- 1 tbsp Fish sauce
- 1 tbsp chilli flakes
- 1 tsbp honey
- 1 Clove of garlic
Bacon Jalapeno Deviled Eggs

Bacon Jalapeno Deviled Eggs are delicious and add a kick to the traditional spring, summer, or appetizer!
- 12 large eggs, hard boiled and peeled
- 1 cup mayonnaise
- 1 1/2 tsp rice vinegar
- 3/4 tsp ground mustard
- stevia or small amount of sugar to taste
- 2 jalapenos, seeded and chopped
- 6 pieces bacon, cooked, crisp, and crumbled

Quinoa Salad with Carrots and Edamame

Whisk together first 5 ingredients and set aside
- 1/4 cup lemon juice
- 1 Tbsp. balsamic vinegar
- 1 tsp. reduced sodium soy sauce
- 3 Tbsp. extra vifgin olive oil
- 1 Tbsp. honey
- 1 cup toasted uncooked quinoa
- 2 cups shelled edamame
- 1 carrot chopped
- 1 stalk celery, chopped
- 1/4 cup slivered almonds

Arrange half the chicken pices in a lightly greased 9 x 13 pan
- 6 cooked chicken or turkey cut into 2" x 1/2" pieces
- 2 cups sour cream
- 12 corn tortillas, cut into 1 1/2" pieces
- 1 1/2 lbs jack cheese, shredded
- GREEN SAUCE
- 1 - 14 oz. can mexican tomatillos, drained
- 1 small oinion cut into pieces
- 2 cloves garlic
- 1 - 4 oz. can green chilies
- 1 tsp. salt
- 1/2 tsp. sugar
Tomatoes in Spicy Yogurt Sauce

1. Bring a large pot of water to boil
- 8 ripe but firm tomatoes
- 1 teaspoon vegetable oil
- 2 teaspoons cumin seeds
- 1 teaspoon brown mustard seeds
- 2 tablespoons butter, cut into small pieces
- 1/4 teaspoon turmeric
- 1/4 teaspoon cayenne
- 6 cloves garlic, minced
- 2 serrano chiles, seeded and finely chopped
- 1 teaspoon salt
- 1 cup plain whole milk yogurt
- Cilantro sprigs (optional)
Lime & Pepper Chicken Wraps

1.Toss the chicken with the lime zest and juice, pepper, oil and a little salt
- 4 skinless chicken breasts, each cut into 6 strips
- zest and juice 2 limes
- 2 tsp black peppercorns, coarsely crushed
