Sweet & sour lentil dhal

1.Cover the lentils, turmeric and tamarind paste with 500ml water
- 100 g red lentils , rinsed
- 1 tsp turmeric
- 1 tbsp tamarind paste (we used Bart)
- 2 tbsp vegetable oil
- 1 medium onion , thinly sliced
- 1 garlic clove , finely chopped
- 3 cm/1 1/4 inch piece ginger , grated
- 1 tsp curry powder
- 1 medium aubergine , cut into 2 cm slices
- cooked basmati rice , lime or mango chutney and a few coriander leaves, to serve, if you like

- 300 g dried pasta shapes
- Parmesan, shaved, and rocket, to serve (optional)
Spicy Peanut Chicken

1. Mix broth, cornstarch, sugar, soy sauce, vinegar and red pepper; set aside
- 1/4 cup Progresso™ chicken broth (from 32-ounce carton)
- 1 tablespoon cornstarch
- 1 tablespoon sugar
- 2 tablespoons soy sauce
- 1 tablespoon white vinegar
- 1/4 teaspoon ground red pepper (cayenne)
- 1 tablespoon vegetable oil
- 1 pound boneless skinless chicken thighs or breast halves, cut into 3/4-inch pieces
- 1 garlic clove, finely chopped
- 1 teaspoon grated gingerroot
- 1 medium red bell pepper, cut into 3/4-inch pieces
- 1/3 cup dry-roasted peanuts
- 2 medium green onions, sliced (2 tablespoons)
Thai rice noodle salad

1.Place the noodles and beansprouts in a heatproof bowl and cover with boiling water
- 1/2 a 250g pack fine vermicelli rice noodles
- 200g bag beansprouts
- zest and juice 2 limes
- 2-3 tbsp fish or soy sauce , to taste
- 1 tsp muscovado sugar or soft brown sugar
- 1 red onion , halved and thinly sliced
- 2 Little Gem lettuce hearts, leaves separated and roughly torn
- TO MAKE WITH MINCE
- 500 g minced pork
- small knob grated ginger
- pinch cayenne pepper

1. On 12 metal or soaked wooden skewers, alternately thread shrimp and chicken

- 3/4 teaspoon lime juice
- 1/4 teaspoon salt
- 1/4 teaspoon each dried basil, thyme and rosemary, crushed
- 1/8 teaspoon cayenne pepper
Chicken Yakisoba

Easy Ramen Chicken Stirfry
- 1/2 head green cabbage
- 1 medium yellow onion
- 2 medium carrots
- 1 small crown broccoli
- 2 inches fresh ginger
- 1 large chicken breast
- 2 Tbsp vegetable oil
- 2 (3 oz.) packages ramen noodles
- seasoning packets discarded
- 1 tsp sesame oil (optional)
- 1/4 cup soy sauce
- 1/4 cup worcestershire sauce
- 2 Tbsp ketchup
- (up to) 1 Tbsp sriracha hot sauce
- 1 Tbsp sugar
Basic Quiche

Preheat oven to 350 degrees Farenheit
- 5 large eggs
- 3 ⁄4 cup milk
- 1 frozen 9-inch deep dish pie shell, or 1 (24 ounce) package tart shells
- 2 cups shredded cheese or 2 cups chopped drained cooked vegetables or 2 cups diced deli meat, any type (or chop up leftover slices) or 2 cups any other cooked diced meat or 2 cups ground beef or 2 cups seafood or 2 cups poultry
- salt and pepper
- 1 tsp Dijon mustard (optional)
- 2 packages (3 ounces each) cream cheese, softened (optional)
Sticky Citrus Chicken with Cashews

Ditch the takeaway and try a traybake full of delicious Chinese flavours instead
- 8 chicken thighs
- 2 onions, cut into thick round slices
- 1 tbsp sunflower oil
- 50 g roasted cashews
- small pack coriander leaves, to serve
- boiled jasmine rice, to serve
- For the glaze
- 100 g clear honey
- 4 tbsp hot chilli sauce
- zest 1 lime, plus 4 tbsp juice (about 2 limes)
- zest 1/2 orange, plus 2 tbsp juice
- 1 tbsp rice vinegar
- 1 tbsp tomato purée
- 2 balls stem ginger, finely chopped, plus 1 tbsp syrup
