Preheat oven to 350 degrees
- 1 onion, diced
- 1/2 cup green peppers, diced
- 1 tablespoon butter
- 2 pounds ground sirloin
- 2 eggs, lightly beaten
- 2 cans tomato juice (5 1/2 oz. cans)
- 1/4 teaspoon Worcestershire sauce
- 1 teaspoon garlic powder
- 2 cups rolled oats (Quaker)
- 1/4 cup ketchup, for coating
Meatloaf With Mushroom Gravy

Preheat the oven to 350 degrees
- For The Mushroom Gravy:
- 2 tablespoons olive oil
- 6 ounces mushrooms, sliced
- 4 ounces shiitake mushrooms, sliced
- 4 ounces portabello mushrooms, sliced
- 2 cups veal or beef stock
- 2 cups chicken stock
- 1/4 cup King Arthur flour
- 1/4 cup water
- salt and pepper to taste
- For The Meatloaf:
- 1 1/2 tablespoon butter
- 1 onion, diced
- 1 stalk celery, diced
- 2 tablespoons diced garlic
- 3/4 pound white bread slices, crust removed
- 1/2 cup milk
- 3 eggs, lightly beaten
- 1 tablespoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon dried basil
- 4 1/2 pounds ground beef
Clam Sauce, White, With Pasta

To Make The Garlic Butter: Mix the garlic butter ingredients by mixer or by hand
- For The Garlic Butter:
- 1 pound butter, at room temperature
- 1/2 cup garlic, minced
- 1/4 cup lemon juice
- 1 teaspoon basil, diced
- 1 teaspoon oregano, diced
- For The Pasta and Sauce:
- 2 pounds linguine or spaghetti
- 72 littleneck clams
- 2 cups white wine
- 2 cups garlic butter
- 4 drops Tabasco sauce
- 2 bunches scallions, thinly sliced
- salt and pepper to taste
- 4 tablespoons grated Romano cheese, for topping
Banana Nut Bread

This makes a moist bread that can frozen
- 1/2 cup cooking oil
- 1 cup sugar
- 2 large eggs, lightly beaten
- 3 large bananas, very ripe, mashed
- 2 cups King Arthur flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 3 tabblespoons milk
- 1/2 teaspoon vanila
- 1/2 cup chopped walnuts (can be increased to 1 cup if you wish to stay in the will)
Guacamole, Cinco De Mayo

Cut avacados into 1/2-inch cubes
- 2 medium avacados, seeded and peeled
- 1 tablespoon fresh lime juice
- 1/3 cup diced tomatoes, seeded and drained
- 1/4 cup chopped scallions
- 1/4 cup chopped cilantro
- 1/2 teaspoon salt
Parsley Pesto With Walnuts

In a food processor, add the parsley, garlic, walnuts, salt and pepper
- 2 cloves garlic, diced
- 1 cup parsley, firmly packed
- 1 cup walnuts, coarsely chopped
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon walnut oil
- 3 tablespoons olive oil
- 1 tablespoon white wine
- 2/3 cup Parmesan cheese
- 8 walnuts, for garnish
Molasses Sugar Cookies

- 3/4 cup shortening
- 1 cup sugar
- 1/4 cup molasses
- 1 egg
- 2 teaspoons baking soda
- 2 cups King Arthur flour
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
Garlic Butter

Mash the roasted garlic in the olive oil
- 1 pound butter, softened
- 6 cloves roasted garlic (in 1/4 cup olive oil)
- 3 cloves garlic, minced
- 2 tablespoons parsley, chopped
- 1/2 cup grated parmesan cheese
- 1 pinch salt t.t.
- 1 pinch pepper t.t.
Trout Almondine

An easy and simple meal with great taste
- 2 8-ounce trout, boned
- 1/2 cup flour
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/2 clove garlic, minced
- 1/3 cup sliced almonds
- 1/4 cup onions, finely sliced
- 2 tablespoons chopped parsley
- 1/4 cup chicken stock
- Pinch of freshly ground pepper
- 2 tablespoons white wine
- 1 tablespoon butter
Chicken Diane

- 1-2 tablespoons olive oil, for sautéing
- 8 chicken breast halves, cut into bite size pieces
- 1 pound mushroom caps
- 1/2 cup white wine
- 1 cup water
- 2 tablespoons corn starch
- 1 bunch scallions, diced
- 1 tablespoon Cajun spice mix
- Pinch dry basil
- 1 garlic clove, minced
- 2 pounds cooked fettucine
