Pasta, Three Cheese and Mushroom

Preheat oven to 350 degrees
- 8 cups tubular pasta
- 1/3 cup butter
- 1 pound mushrooms, sliced
- 2 cloves garlic, minced
- 1/4 cup King Arthur flour
- 2 tablespoons fresh rosemary, chopped
- 1/4 teaspoon red pepper flakes
- 1/2 cup dry white wine
- 4 cups milk
- 6 ounces fontina cheese, diced
- 1/4 pound Gorgonzola cheese, crumbled
- 1/2 cup Parmesan cheese, grated
- salt and pepper to taste
Fish Sandwich

Preheat oven to 400 degrees
- 1/3 cup cornmeal
- 1/3 cup King Arthur flour
- 1 tablespoon water
- 1/4 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
- 1 garlic clove, minced
- 1 large egg
- 6 fish filets (grouper, cod, tilapia, haddock), about 5 oz each
- Cooking spray
- 1 cup Tartar sauce
- 6 hamburger buns, split and toasted
- 3 cups iceberg lettuce, thinly sliced
Lamb Chops With Pear Sauce

Combine the pears with 1/2 cup of the chicken broth in a small saucepan and bring to a boil
- 2 medium pears, peeled and quartered
- 3/4 cup chicken broth
- 2 teaspoons olive oil
- 4 lamb loin chops, 1/2" thick
- salt and pepper to taste
- 1/4 cup shallots, diced
- 1/2 cup white wine
- 1 tablespoons chopped chives
Trout, Pecan Trusted with Kentucky Bourbon Sauce

Mix the sauce ingredients together and set aside at room temperature
- FOR THE BOURBON SAUCE
- 1/4 cup honey
- 1/4 cup smooth Dijon mustard
- 2 tablespoon Bourbon
- Juice of 1 lemon
- 2 tablespoons fresh parsley, chopped
- FOR THE TROUT
- 1 cup finely chopped pecans
- 1 cup Panko bread crumbs
- 1 cup fresh parsley, chopped
- Zest of 3 lemons
- 2 rainbow trout fillets, (12 oz. Each), headless, cleaned, boned and split in half
- Salt and pepper to taste
- 1/2 cup flour
- 2 eggs
- 2 tablespoons milk
- 1 tablespoon butter
- 3 tablespoons vegetable oil
Lobster Ravioli, Aujourd'hui's

To Make The Ravioli: Mix together the lobster meat, sauteed leek, mascarpone cheese and chives in a small bow
- For The Ravioli:
- 1/4 cup lobster meat, diced
- 1/4 cup leek, diced
- 2 tablespoons mascarpone cheese
- 1 tablespoon chives, minced
- 16 2-inch psta sheets
- 1 egg white, beaten
- For The Lobster Cream:
- 1/4 cup olive oil
- 1 carrot, peeled and chopped
- 1 onion, chopped
- 1 pound lobster bodies
- 2 tablespoons tomato paste
- 3 cups heavy cream
- 1/4 cup brandy
- 1 bay leaf
- 1 bunch thyme
- For The Final Presentation:
- 2 tablespoons butter
- 1 cup corn kernels
- 1 cup scallions, sliced
- 1 tablespoon tomatoe, peeled, seeded and diced
- 1 1/2 teaspoons chives, diced
- salt and pepper to taste
Lamb Burgers, Turkish

Combine lamb, 1/2 cup onions, 1 teaspoon salt, pumpkin pie spice and 1/4 teaspoon cayenne pepper in a medium bowl
- 1 1/2 pounds ground lamb
- 1 cup green onions, chopped
- 1 1/4 teaspoons salt
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon cayenne pepper
- 1 cup plain yogurt
- 1 teaspoon cumin
- 4 pita bread rounds, about 6", Top 14/ cut off
- 1 cup plum tomatoes, seeded and diced

- 4 chicken breasts, boneless, skinless, trimmed and pounded to 1/4 inch thickness (8 ounces each)
- 1/2 cup Italian salad dressing
- 1 tablespoons plus 1/2 teaspoon freshly ground black pepper
- 1 plus 1/2 lemon
- 3 eggs
- 3/4 cup King Arthur flour
- 1/4 cup olive oil
- 1/2 cup dry white wine

- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 2 teaspoons cinnamon
- 1 teaspoon salt
- 4 eggs, lightly beaten
- 1 1/2 cups vegetable oil
- 2 cups sugar
- 1 pound carrots, pared and finely shredded
- 1 can (8oz.)crushed pineapple, drained
- For The Orange Frosting:
- 6 ounces cream cheese
- 3 1/2 cups confectioner's sugar
- 1 teaspoon grated orange peel
- 1-2 Tablespoons orange juice
