Lobster Pie, C.T.M. Pocasset

Preheat oven to 300 degrees
- 5 tablespoons butter
- 1/2 cup sherry
- 2 cups cooked lobster meat
- 1 tablespoon King Arthur flour
- 1 1/2 cups light cream
- 2 egg yolks
- 1/4 cup Ritz cracker crumbs
- 1 1/2 teaspoons Parmesan cheese
- 2 tablespoons melted butter
- 2 tablespoons potato chips, crumbled
Rib Sauce, Emeril's

- 1 tablespoon vegetable oil
- 1 medium onion, diced
- 3 garlic cloves, minced
- Coarse salt and pepper to taste
- 1 cup ketchup
- 1 cup canned beef broth
- 3/4 cup cider vinegar
- 1/4 cup brown sugar, packed
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon celery salt
- 1/4 teaspoon cayenne pepper
Shrimp, Sesame Seed Crusted

- 1 large egg
- 1/2 cup hulled sesame seeds
- 2 tablespoons King Arthur flour
- 1/2 teaspoon Kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon Chinese five-spice powder
- 12 large shrimp (about 1/2 pound), peeled and deveined
- 3/4 cup vegetable oil

In a large, heavy skillet over medium heat, heat the 1 tablespoon of olive oil
- 1 tablespoon olive oil
- 1/3 cup green pepper, chopped
- 1/3 cup red pepper, chopped
- 1 pound crabmeat
- 1 egg
- 2 tablespoons relish
- 32 tablespoons mayonnaise
- 1/4 cup crushed
- ritz crackers
- 2 tablespoons fresh parsley, chopped
- juice from 1/2 lemon
- salt and pepper to taste
- 1 tablespoon butter, for sauteing
- 1 tablespoon olive oil, for sauteing
Chicken Dijon, Shorty's

In a large skillet over medium heat, heat the canola oil
- 2 pounds boneless, skinless chicken breasts, sliced in 1/2' pieces
- 1 tablespoon canola oil
- 1 cup shallots, peeled and sliced thin
- 4 cups mushroom caps, sliced
- 4 cups asparagus, cut in 1" pieces
- 2 cups chicken stock
- salt and pepper to taste
- 3 1/2 cups heavy cream
- 4 tablespoons Dijon mustard
- 12-16 Tortillas or crispy crepes
Four Cheese Sauce With Pasta

In a large saute pan over medium heat, melt the butter
- 1 teaspoon butter
- 1 tablespoon shallots, minced
- 1 teaspoon garlic, minced
- 1 cup white wine
- 2 cups heavy cream
- 1/2 cup Parmesan cheese, grated
- 1/4 cup Mozzarella cheese, shredded
- 1/4 cup provolone cheese, shredded
- 1/2 cup Boursin cheese, with herbs & garlic, shredded
- 1 teaspoons chives, chopped
- 1 teaspoon basil, julienned
- 1 teaspoon thyme, chopped
- salt and pepper to taste
- 1 pound pasta of your choice.
Rigatoni con Pollo, Apetito's

In a large pot of boiling water, cook the rigatoni according to package instructions
- 1/2 cup olive oil
- 2 tablespoons garlic, minced
- 3 boneless, skinless chicken breasts, julienned
- 65 cranberries, sun dried (craisins)
- 1 1/2 cups brandy
- 2 cups heavy cream
- 1 cup chicken stock
- 12 ounces spinach, washed and chopped
- 2 pounds rigatoni
- 1/4 cup cranberry juice
- salt and pepper to taste
