Gorgonzola-Grilled Pear Crostini (Southern Living)

Preheat grill to 350° to 400° (medium-high) heat
- 3 firm ripe Bartlett pears, cut into 1/4-inch-thick wedges
- 1/2 (8-oz.) package cream cheese, softened
- 4 ounces Gorgonzola cheese, crumbled
- 1/4 cup butter, softened
- 2 tablespoons dry sherry
- 36 French bread baguette slices, toasted
- 1/2 cup finely chopped, lightly salted roasted pecans
- 2 tablespoons finely chopped fresh rosemary
- 1/4 cup honey
Lobster Champagne Cream Sauce over Pappadelle

Remove the meat from the lobster tails
- 2 lobster tails
- 6 tbsp. butter, divided
- 2 shallots, finely minced
- 2 carrots, peeled and thinly sliced
- 2 tbsp. tomato puree
- 1 1/2 cups chicken stock
- 3/4 cup Champagne
- 3 tbsp. flour
- Heavy cream
- Pappadelle pasta

- 2 T. dried minced onions
- 1 T. dijon mustard
- 1 T. poppy seeds
- 1 stick melted butter or 1/2 cup margarine
- 1 tsp Worcestershire sauce
- 1 TB Brown Sugar
- 1 dozen slider rolls or 2 dozen party rolls- (Martin's Potato Slider Rolls or Pepperidge Farm party rolls)
- 1/2 pound thinly sliced deli ham
- 1/2 pound thinly sliced Swiss or Cheddar cheese
Cucumber Tea Sandwiches

- 4 tablespoons unsalted butter, divided
- 3 cloves garlic, minced, divided
- 2 cups fresh corn kernels (from about 2 ears), or frozen and thawed
- 2 cups heavy cream
- 1 teaspoon fresh thyme
- Salt and freshly ground black pepper
- 1/2 cup thinly sliced white onion
- 1 large zucchini, thinly sliced lengthwise
- 4 poblano chiles, charred, peeled, stemmed, seeded and cut into 1-inch strips
- 12 (7 by 3-inch) no-boil lasagna sheets
- 2 cups shredded Oaxaca cheese, or mozzarella

- Salt
- 8 oz. fettuccine or your favorite pasta
- Extra-virgin olive oil, for drizzling
- 6 slices smoky bacon, chopped
- 4 ears corn on the cob, shucked
- 1 1/2 cup zucchini, thinly sliced
- 2 shallots, finely chopped
- 1/2 small red bell pepper, seeded and chopped
- Freshly ground black pepper
- 1/2 cup half-and-half or cream - whatever you put in your morning coffee
- 1/4 cup chicken stock or dry white wine
- 1 tablespoons chopped fresh thyme leaves
- A few dashes hot sauce or 1 or 2 pinches cayenne pepper
- 1/2 cup grated Parmigiano-Reggiano or Pecorino Romano
- 1/4 cup torn sweet basil leaves
Spinach Florentine (Paula Deen)

Remove the outer wrappers from the box of spinach
- 1 (10-ounce) packages frozen chopped spinach
- 3 chicken breast halves (about 4 pounds), cooked, boned, and shredded
- 1 (10 3/4-ounce) cans condensed cream of mushroom soup
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 cup grated sharp Cheddar
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon curry powder
- Salt and freshly ground black pepper
- 1/4 cup dry white wine
- 1/4 cup freshly grated Parmesan
- 1/4 cup soft bread crumbs

TGI Friday's Baked Potato Skins (copy cat)

Heat oven to 375F. Brush potato shells with melted butter and sprinkle seasoning salt to taste
- 5 baked potato skins, cut in half (empty of most of the potato)
- 1 tablespoon melted butter

- 1/2 cup crispy fried bacon, diced (about 5 strips)

- 1 1/2 pounds small sweet potatoes, peeled and thinly sliced
- 2 teaspoons chopped fresh thyme, divided
- 1 cup (4 oz.) freshly shredded mozzarella cheese, divided*
- 2/3 cup heavy cream
- 1 garlic clove, pressed
- 1/2 to 3/4 tsp. salt
- 1/4 teaspoon freshly ground pepper
- Garnish: fresh thyme
- Can be subsituted with Gruyere cheese
Tandoori-Spiced Chicken (Cooking Light)

1. Combine first 8 ingredients in a heavy-duty zip-top plastic bag
- 1 1/2 cups plain 2% reduced-fat Greek yogurt
- 2 tablespoons grated onion
- 1 tablespoon grated peeled fresh ginger
- 1 tablespoon canola oil
- 1 teaspoon ground cumin
- 1/2 teaspoon ground red pepper
- 1/4 teaspoon ground turmeric
- 3 garlic cloves, minced
- 4 (6-ounce) skinless, boneless chicken breast halves 1/2 teaspoon salt
- Cooking spray
