Pumpkin Chocolate Chip Muffins

A friend of mine (Jen Hampsey) gave me this recipe
- Mix together:
- 2 eggs
- 1/3 cup milk
- 1/2 (to 3/4) canned pumpkin - smaller can (15 oz?)
- 1/2 cup oil
- Add
- 1/4 c sugar
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp all spice or ginger
- Add
- 1 3/4 c flour
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- Add
- 4 oz of chocoloate chips
Grilled Stuffed Jalapenos

1. Preheat grill to medium-high heat
- 2 slices center-cut bacon
- 1/2 cup (4 ounces) cream cheese, softened
- 1/2 cup (4 ounces) fat-free cream cheese, softened 1/4 cup (1 ounce) shredded extra-sharp cheddar cheese
- 1/4 cup minced green onions
- 1 teaspoon fresh lime juice
- 1/4 teaspoon kosher salt
- 1 small garlic clove, minced
- 14 jalapeño peppers, halved lengthwise and seeded Cooking spray
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons chopped seeded tomato
Baked Brie with Walnuts

Based on Baked Brie at "Madbatter" in Cape May, NJ
- 1 sheet frozen puff pastry, pre-packaged
- 1 tablespoon unsalted butter
- 1/2 cup walnuts, chopped
- 1/8 teaspoon ground cinnamon
- 1 (8-ounce) wheel Brie
- 1/4 cup brown sugar
- 1 egg, beaten
- Green Apples, sliced
Sriracha Remoulade

Mix all ingredients together
- 1 1/2 cups light mayo
- 4 green onions, sliced
- 2 TB chopped parsley
- 2-3 TB Asian Sriracha hot chili sauce
- 1 clove garlic, pressed
Pimento cheese Balls

- Pimento Cheese
- Chopped pecans, toasted
- crumbled bacon
Shrimp Cobb Salad (Cooking Light)

1. Cook bacon in a large nonstick skillet over medium heat until crisp
- 4 slices center-cut bacon
- 1 pound large shrimp, peeled and deveined
- 1/2 teaspoon paprika
- 1/4 teaspoon black pepper
- Cooking spray
- 1/4 teaspoon salt, divided
- 2 1/2 tablespoons fresh lemon juice
- 1 1/2 tablespoons extra-virgin olive oil
- 1/2 teaspoon whole-grain Dijon mustard
- 1 (10-ounce) package romaine salad
- 2 cups cherry tomatoes, quartered
- 1 cup shredded carrots (about 2 carrots)
- 1 cup frozen whole-kernel corn, thawed
- 1 ripe peeled avocado, cut into 8 wedges
Dan’s Chili

1. Brown turkey in large nostick Pot
- 1 large onion chopped
- 1-2 TBS Oil
- 2 Large Garlic Cloves
- 1.5 Lbs Ground turkey or beef
- 4 TBS of Chili powder
- 1 TBS Cumin
- 2 12 oz cans of crushed Tomatoes (or other tomato prod)
- 2 TBS Hot Sauce
- 1 TSP of Salt
- 2 TSP of Black Pepper
- 3/4 Cup of Bloody Mary Mix
- 1/2 Cup Red Wine
Chimichurri (Cooking Light)

1. Combine parsley, cilantro, oregano, and garlic in a food processor, and process until finely chopped
- 1 cup fresh flat-leaf parsley leaves
- 1 cup fresh cilantro leaves
- 1/4 cup fresh oregano leaves
- 2 garlic cloves
- 1/2 teaspoon grated lime rind
- 2 tablespoons fresh lime juice
- 2 tablespoons extra-virgin olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon crushed red pepper
Carmelized Onion, Proscuitto, Goat Cheese Pizza

In a heavy-bottomed dutch oven, cook proscuitto over medium-low heat until fat is rendered and is crispy
- 7-8 thin slices of Proscuitto
- 1 Large Onion, sliced
- 1 batch pizza dough (enough for a large pizza)
- 4 ounces goat cheese
- 1/2 cup shredded mozzarella
- 1/4 cup shredded gruyere cheese
Mini Mex Rolls

- 1 chicken breast, cooked and finely chopped
- 1/4 cup taco seasoning
- 1/2 cup water
- 1 1/2 cups shredded pepper Jack cheese
- 1/2 cup diced roasted red pepper
- 1/2 cup chopped pickled jalapenos
- 1/2 cup corn
- 1 scallion, chopped
- 1/2 cup black beans
- 1 egg
- 2 tablespoons water
- Wonton or egg roll wrappers
- Canola oil, for frying
