Carolina Pimento Cheese Chicken Salad (Cooks Country)

Combine cheese, mayonnaise, pimentos, sour cream, lemon juice, cayenne, scallions, and garlic in large bowl
- 1 cup shredded cheddar cheese
- 1 garlic clove , minced
- 2 tablespoons lemon juice
- 2 tablespoons sour cream
- 2 scallions , sliced thin
- 1/2 cup mayonnaise
- 1/2 cup jarred pimentos , chopped and drained
- Salt and pepper
- 5 cups cooked boneless, skinless chicken breast
- 1/8 teaspoon cayenne pepper
Whipped Brie Bites

Preheat your oven to 400 degrees
- 1 sheet puff pastry, rolled out and cut into 16 squares
- 8 ounces brie cheese (I used Ile de France, because they sent it to me, and it worked great!)
- 1/4 cup heavy cream
- 2 tbsp honey
Pecan Chicken Salad

In a bowl, combine mayo and sour cream/yogurt
- 1/2 cup light mayo
- 1/4 cup light sour cream or plain yogurt
- 3 cups cooked chicken, chopped
- 1 cup seedless grapes, halved
- 1/4 cup crushed pineapple, drained
- 3/4 cup toasted chopped pecans
- salt & pepper
Pimento Cheeseburger (Cooks Country)

1. MAKE PIMENTO CHEESE Mix cheddar cheese, pimentos, cream cheese, mustard, and cayenne in bowl until well combined
- 1 1/2 cups (about 6 ounces) extra-sharp cheddar cheese , grated fine
- 1/3 cup drained jarred pimentos , chopped fine
- 2 ounces cream cheese , softened
- 1/2 teaspoon dry mustard
- 1/8 teaspoon cayenne pepper
- 1 tablespoon mayonnaise
- 1 1/2 pounds 85 percent lean ground beef (see note)
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon salt
- 1/2 teaspoon pepper

- 2 tablespoons fresh lemon juice

- 2 1/2 cups chicken, cooked, shredded
- 2 tablespoons olive oil
- 1/2 cup onion, chopped

Panko-crusted Crab Cake Bites with Roasted Pepper-Chive Aioli

- Crab Cakes:
- 12 ounces shelled cooked crab
- 1/4 cup finely diced celery
- 1/4 cup minced fresh chives
- 1/4 cup mayonnaise
- 1 large egg

Baked Orzo in Greek Tomato Sauce (GOOD)

This is my 'take' on Cava's Baked Orzo that had a touch of cinnamon in it - so delicious!
- 2 TB olive oil
- 1 clove of garlic, minced
- 1/2 cup dry red wine
- 1 8-oz can of tomato sauce
- 1 cup of orzo
- 1/2 teaspoon dried oregano
- 1/4 teaspoon ground cinnamon
- pinch of allspice
- salt & pepper to taste
Mulled Wine

- 1 bottle red wine - such as Cabernet or Merlot
- 1/2 cup honey
- 1/3 cup orange-flavored liqueur
- 6-8 whole cloves
- 2 cinnamon sticks - 3-4 inches each
- 2 tsp ground ginger (allspice can be substituted)
