Bring a large pot of well salted water to a boil over medium heat
- Salt
- 1 tablespoon olive oil
- 1 clove garlic
- 1/4 cup onion, chopped
- 4-5 thinly sliced proscuitto, cut into 1/4-inch dice
- 1/2 lb (1/2 a box) thin spaghetti
- 3 large eggs
- 1/4 cup grated Parmesan
- 1/4 cup grated pecorino
- Freshly ground black pepper
- 4 scallions, cut on a severe bias
Cellophane Noodle Salad with Peanut Dressing

- Dressing:
- 1/4 cup water
- 1/4 cup low-sodium soy sauce
- 2 tablespoons brown sugar
- 2 tablespoons rice vinegar
- 1 tablespoon grated peeled fresh ginger
- 1 tablespoon canola oil
- 1/4 teaspoon crushed red pepper
- 1/4 teaspoon five-spice powder
- 2 garlic cloves, minced
- Salad:
- 1 1/2 cups matchstick-cut carrots (about 4 ounces)

- 3/4 cup thinly sliced green onions

- 1/2 cup julienne-cut red bell pepper
- 3 tablespoons chopped fresh cilantro
- 2 tablespoons chopped fresh mint
- 3 tablespoons chopped dry-roasted peanuts, divided

Crab & Goat Cheese Ravioli (Cuisine at Home)

For ravioli: Combine goat cheese, chives, salt & pepper in a bowl
- Filling:
- 4 oz. goat cheese, softened
- 2 TB chopped fresh chives
- 1/4 tsp each of salt & pepper
- 1 can lump crabmeat (6.5 oz)
- 32 won ton wrappers
- 2 TB olive oil
- Sauce:
- 2 cloves garlic, sliced
- 1 TB unsalted butter
- 3/4 cup heavy cream
- 1 TB fresh lemon juice
- Lemon zest
Truffle Chocolate-Tini

Combine the creme de cocoa, liqueur, vodka and chocolate milk in a pitcher
- 1/2 cup dark creme de cocoa, chilled
- 1/4 cup chocolate liqueur, chilled, such as Godiva
- 1/4 cup whipped cream vodka, chilled, such as Smirnoff
- Splash chocolate milk
- 2 chocolate truffles, for garnish

Mighty Migas (Rachael Ray)

- 2 tablespoons EVOO - Extra Virgin Olive Oil
- 1/3 pound Mexican raw chorizo, casings removed
- 4 6-inch corn tortillas, torn into bite-sized pieces
- 1 medium onion, chopped
- 1 jalapeño, seeded and chopped
- 2 to 3 cloves garlic, finely chopped or grated
- 8 eggs, whisked together
- Hot sauce, to taste
- Salt and freshly ground black pepper
- 2 tomatoes, seeded and diced
- 1 avocado, diced
- Juice of 1 lime
- 1 cup shredded smoked cheddar or Monterey Jack cheese

- 3 slices of bacon, small diced
- 2 stalks of celery, small diced
- 1 small red pepper, small diced

- 1 10-ounce can of cream style corn
- 2 cups of chicken stock or fish stock
- ½ cup of heavy cream
- 2 splashes of Tabasco
- ¼ teaspooon pepper
- ½ pound picked crabmeat
- 1 medium onion, small diced
- 1 carrot, small diced
- 1 small green pepper, small diced
- 2 tablespooons flour
- 1 cup of frozen shoe peg corn
- 1 splash Worcestershire sauce

Pear and Goat Cheese Crostini (Rachael Ray)
