Lemon Sugar Cookies Recipe

These are my favorite sugar cookies
- 1 cup butter, softened
- 1 cup sugar
- 1 cup confectioners' sugar
- 1 cup vegetable oil
- 2 eggs
- 1 teaspoon lemon extract
- 4-1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
- Additional sugar
Classic French Madeleines

These are sophisticated (but easy to make) little snack cakes, French style- somewhat like a mini cupcake/poundcake
- 3/4 cup unsalted butter, melted and cooled
- 3 eggs, room temperature
- 1 egg yolk
- 3/4 cup sugar
- 1 1/2 teaspoon pure vanilla extract
- 2 teaspoons lemon zest, finely minced
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1 1/3 cup all-purpose flour
- 1 tablespoon cornstarch
Chocolate Caramel Cookies with Sea Salt

These cookies are very chocolaty
- 1 1/4 cup all-purpose flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 5 tablespoons butter
- 7 tablespoons unsweetened cocoa (I used dark cocoa)
- 2/3 cup granulated sugar
- 1/3 cup packed brown sugar
- 1/3 cup plain yogurt
- 1 teaspoon vanilla extract
- Soft caramel, rolled into little balls (I used Peter's caramel)
- Sea salt
Quinoa with Tomatoes, Parmesan & Basil

1. Rinse quinoa in a sieve under running water, stirring to make sure it is well rinsed
- 1 Cup of Quinoa
- 1 tbsp olive oil
- 1 onion, finely chopped
- 3 cloves of garlic, minced (I used more)
- freshly ground salt and pepper
- 2 cups of Vegetable stock
- 4 plum tomatoes, seeded and chopped
- 1/4 cup freshly grated Parmesan cheese
- 1/4 cup thinly sliced fresh basil
- Shaved Parm cheese for garnish

- 1/2 cup unsalted butter
- 2 eggs
- 1 cup sugar
- 1/2 cup flour
- 1/2 teaspoon kosher salt
- 1 teaspoon pure vanilla extract
- 1/2 ounce semisweet chocolate (1/2 square)
- Filling
- 1 1/2 cups powdered sugar
- 1/2 cup creamy peanut butter
- 1/4 cup unsalted butter , softened
- 2 -3 tablespoons heavy whipping cream
- Glaze
- 1 ounce semisweet baking chocolate
- 1 tablespoon butter or 1 tablespoon margarine
