- 1 3/4 cups King Arthur Unbleached All-Purpose Flour
- 1/4 cup cornstarch
- 3/4 teaspoon salt
- 1 tablespoon baking powder
- 2 teaspoons sugar
- 1 to 1 1/4 cups heavy cream, enough to make a cohesive dough
- 1 to 2 tablespoons melted butter

- For the Cupcakes
- 1 3/4 cups all-purpose flour
- 2 cups sugar
- 3/4 cups cocoa powder

- 1/2 cup vegetable oil
- 2 eggs, at room temperature
- 1 teaspoon pure vanilla extract
- 1 cup freshly brewed hot coffee
- For the Mocha Buttercream
- 4 sticks (2 cups) unsalted butter, room temperature
- 2 teaspoons pure vanilla extract
- 1/8 teaspoon fine sea salt
- 2/3 cup unsweetened cocoa powder
- 5 cups confectioners' sugar (powdered sugar)
- 3-5 tablespoons cold coffee
- For the Garnish
- 1 1/2 cups coconut, lightly toasted (see recipe notes below)

- 2 cups powdered sugar
- 2 teaspoons milk

For the cupcakes: Preheat the oven to 350°
- 2 1/2 cups flour , sifted
- 1/2 tsp. baking powder, sifted
- 1/4 Tsp. salt
- 8 Tbsp. (4 ounces) unsalted butter
- 1 3/4 cups sugar
- 2 large eggs, at room temperature
- 2 1/4 tsp. pure vanilla extract + seeds from 1 vanilla bean

- Bottom Crust
- 1 Batch prepared brownies (recipe below) or a Chocolate Crumb Crust
- Filling
- 2 1/2 pounds cream cheese, room temperature
- 1/2 cup sugar
- 1 14-ounce can condensed milk
- 5 eggs
- 1/3 cup whipping cream
- 2 tablespoons all-purpose flour
- 1 tablespoon pure vanilla extract
- Pinch salt 1 1/2 cups white chocolate, coarsely chopped
- 1 cup semi-sweet chocolate chips or coarsely chopped chocolate
- 2 cups coarsely chopped chocolate caramel bars such as Snickers or Turtles
- 1 cup coarsely cut brownie chunks (recipe below or mix prepared)
- 1/2 cup dulce de leche or caramel sundae sauce

- 3/4 cup unsalted butter
- 1 1/4 cups light brown sugar
- 1 tbsp molasses
- 3 eggs
- 2 tbsp finely chopped crystalized ginger*
- 1 1/2 tsp vanilla
- 1/2 tsp salt
- 1 1/2 cups all purpose flour
- 1/2 tsp baking soda
- 3/4 cup dried cranberries, chopped
- 4 oz white chocolate, chopped
- the ginger is quite sticky once you start to chop it so I tossed it into my magic bullet with a tbsp of granulated sugar and pulsed it until it was a fairly fine powder.
- for the frosting
- 4 oz cream cheese, softened
- 3 cups powdered sugar
- 4 tsp lemon juice
- 1 tsp vanilla
- 1/4 cup chopped dried cranberries to sprinkle on top
