- 2 TABLESPOONS PEANUT BUTTER
- 1/2 TEASPOON CINNAMON
- 1/4 TEASPOON GROUND GINGER
- PINCH OF SALT

- 1 TABLESPOON CHOPPED GARLIC
- SALT AND CAYENNE
- 1 CUP WATER
- 2 BAY LEAVES
- 2 POUNDS SHRIMP, PEELED AND DEVEINED
- 2 TABLESPOONS FLOUR MIXED WITH 1/4 CUP COLD WATER
- EMERIL'S ESSENCE
- 6 CUPS COOKED RICE
- 1/2 CUP CHOPPED GREEN ONIONS
APPLE WALNUT SALAD WITH RASPBERRY VINAIGRETTE

PREP TIME 20 MINUTES
- 1 HEAD OF ROMAINE LETTUCE, SHREDDED
- 2 APPLES, CHOPPED
- 1 CUP WALNUTS, CHOPPED OR WHOLE
- 1/2 CUP FETA CHEESE
- RASPBERRY VINAIGRETTE
- 1/2 CUP CHOPPED RED ONION (ABOUT HALF OF A SMALL RED ONION)
- 1/2 CUP SUGAR
- 1/4 CUP RED RASPBERRY VINEGAR
- 1 TEASPOON SALT
- 1/2 TEASPOON DRIED MUSTARD (OPTIONAL)
- PLACE ONION, SUGAR, VINEGAR SALT AND DRIED MUSTARD IN A FOOD PROCESSOR OR BLENDER. BLEND UNTIL SMOOTH ABOUT 1 MINUTE.
- 1/4 CUP OLIVE OIL
- PUT BLENDER ON LOW SPEED AND SLOWLY POUR IN OLIVE OIL TO COMBINE.
- 1/2 TEASPOON POPPY SEEDS (OPTIONAL)
- TURN OFF BLENDER. STIR IN POPPY SEEDS IF DESIRED.
