- 1/2 c. sesame seeds, toasted
- 1/4 c. oil
- 1/4 c. flour
- 2 scallions, sliced
- 1 garlic clove, crushed
- 1/4 tsp. pepper
- 3-4 lb. beef tenderloin

- 1/2 (16-ounce) package rigatoni pasta
- 1 small onion, chopped
- 2 tablespoons olive oil
- 3/4 cup chicken broth
- 2 teaspoons lemon zest
- 2 tablespoons fresh lemon juice

- 1 cup matchstick carrots
- 2 tablespoons chopped fresh basil

• Heat oven to 350 degrees
- 1 pound boneless skinless chicken breasts, cut into small pieces
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1/2 cup chopped onion
- 1 Tablespoon chopped fresh cilantro or 1 teaspoon dried cilantro leaves
- 2 cups Lowfat Refried Beans (p.42) or 1 (16- ounce) can refried beans
- 1 (10- ounce) can mild enchilada sauce
- 1 (8- ounce) can no salt added tomato sauce
- 8 (8- inch) flour tortillas
- 3 ounce (3/4 cup) shredded lowfat cheddar cheese
- Plain nonfat yogurt, if desired
