Preheat oven to 350 Lightly grease 2 1/2 quart casserole dish
- 2 cups (8 oz) dry elbow macaroni
- 2 cups (8oz pkg.) shredded cheddar cheese
- 2 cups (8oz) shredded Pepper Jack cheese, divided
- 1 can (12oz) Carnation Milk
- 1/2 tsp black pepper
- 1/2 to 1 cup broken tortilla chips
- 1/4 to 1/2 tsp crushed red pepper
Pork Kebabs & Orzo Salad

Whisk together vinegar, oil, and mustard
- 2 Tbsp red wine vinegar
- 2 Tbsp olive oil
- 1 tsp Dijon mustard
- 1 lg shallot, minced
- 1 1/2 Tbsp capers
- 2 roasted red bell peppers, chopped
- 6 oz green beans, chopped
- 8 oz whole wheat orzo
- 1 1/2 lb pork tenderloin, cut into 1" cubes
- 1 sm red onion, cut into chunks
- 3/4 lb cherry tomatoes, preferably on the vine
- 1/2 c chopped fresh basil
- Soak 8 wooden skewers (8"- 10") in water at least 20 minutes.

- 1 pkg. (3.9 oz.) JELL-O Chocolate Instant Pudding
- 4 eggs
- 1 cup BREAKSTONE'S or KNUDSEN Sour Cream
- 1/2 cup oil
- 1/2 cup water
- 1 tub (8 oz.) COOL WHIP Whipped Topping (Do not thaw.)

- 4 1/2 oz. (about 1 1/2 cups) uncooked whole-wheat or high-fiber penne pasta
- 2 - 3 yellow summer/crookneck squash (enough to yield 4 cups once cut up)
- 3 cups chopped spinach leaves
- 1 large tomato, seeded and chopped
- 4 wedges The Laughing Cow Light Creamy Swiss cheese
- 2 slices fat-free cheddar cheese
- 2 tbsp. fat-free sour cream
- 1/4 cup precooked real crumbled bacon
- Optional: salt and black pepper, to taste

Directions In a blender, combine the raspberries, strawberries, and pineapple juice
- 1/2 cup frozen unsweetened raspberries
- 1/2 cup frozen unsweetened strawberries
- 3/4 cup unsweetened pineapple juice
- 1 cup (8 ounces) fat-free vanilla yogurt
- In a blender, combine the raspberries, strawberries, and pineapple juice. Add the yogurt. Blend until smooth.
